Danish Whisky

Over the course of the last four years, Danish whiskey from smaller distilleries have taken the international whiskey world by storm! And with good reason. The nature of the Danish and greater Scandinavian countries are ideal for whiskey production. Many Danish whiskies are single malts, like Køge-based Braunstein. In addition, there has been a great deal of interest in Stauning and Thy Whisky.

Because of their fantastic taste, the many Danish whiskies have won various prizes around the world over the past five years. This has cemented Danish whiskey as some of the very best whiskey in the world. It is a wide belief that we can look forward to even more exciting Danish whiskies.

    Nose

    Soft and inviting with vanilla, light honey and ripe fruit. Peach and apricot from the Bourbon cask, a hint of dark berry from the Port wine cask and a warm vanilla-wood note from the STR cask.

    Palate

    Round and approachable with enveloping fruit sweetness, light oak and a whisper of warm spice. The broad cask combination makes for a whisky that comes at you from all sides at once.

    Finish

    Medium length with a light warm oak note and a fruity-sweet fade.

No 14 is the numbered edition of the Bøg expression – with a markedly higher ABV than Core Expressions Bøg (50%) and with a concentration that brings the natural softness of the beech smoke out even more clearly.

Made from 100% organic barley and distilled in copper pot stills in the historic DSB train depot in Nyborg, Funen.

    Nose

    Fresh organic malt with fruity sweetness and light vanilla and honey notes from bourbon-influenced wood.

    Palate

    Round and approachable with a sweet malt core and light fruity body. A discreet warmth from the bottling strength and a lovely oak finish.

    Finish

    Medium length and gentle with lingering sweet malt and a warm fade.

    Stauning Rye Cask Strength February 2019 is a Danish Rye Whisky bottled at 58.7% cask strength and distilled in 2015 and 2016. Released February 2019. Only 1,873 bottles. Non-chill filtered, undiluted – exactly as it came from the cask. Made from 100% Danish rye malt, floor-malted in-house at Stauning.

    The cask strength edition is the ultimate expression of Stauning's rye whisky. Nothing has been removed or diluted – all complexity, all spice and all concentration is intact. A few drops of water open the aromas, but try it neat first.

    Nose

    Intense and complex. Rye bread, dark sugar, dried cherries and pepper. A little oak and vanilla in the background.

    Palate

    Powerful and spiced rye core. Dark fruits, pepper, ginger and chocolate. Enormous concentration and good balance for 58.7%.

    Finish

    Long and warm with dark fruit, oak tannins and spices that continue for ages.

Friends of Stauning is a group closely connected to the distillery who acquired this Private Cask. The whisky was distilled in 2015 and bottled three years later in 2018 – a relatively young age, but Stauning's intensive production method and small pot stills build character and complexity quickly. The peated style draws on West Jutland peat and is bottled undiluted at 58.1%, preserving every nuance from the cask.

    Nose

    Fresh smoke with a herbal edge. Light sweetness of vanilla and green fruit beneath the smoke. Lively and inviting.

    Palate

    Smoke and spices dominate. Behind them, gentle sweetness, a hint of citrus and a touch of black pepper. Intense and direct.

    Finish

    Medium length with sustained smoke and dry spices. A warm, lightly peppery close.

    Finish

    Long and persistent with dried fruits and a dark, chocolatey close.

    KAOS September 2018 differs from the June edition of the same year with a slightly higher ABV and a bit more oak and spice. Stauning uses each batch as an opportunity to experiment with grain composition and maturation time.

    Peach and apricot with slightly more oak than earlier editions. Honey and light blossom in the background.

    Palate
