The malt is floor-malted and peated on site – Stauning's smoke is not an additive, it is built into the process. This is a Private Cask: one person, one cask, no repeat.

Stauning Whisky opened in 2005 as Denmark's first modern distillery and quickly earned international recognition. In 2010, Stauning was still nine friends with a shared dream, working out of an old meat-processing plant in Skjern. This cask is from that era – three winters in Oloroso sherry wood, bottled in 2013 with sherry written all over it.

Stauning Traditional Oloroso Cask 2010/2013 is a Danish Single Malt Whisky matured in Oloroso sherry casks and bottled at 52.8%. The Traditional expression is Stauning's unpeated single malt built on malted barley – the foundation the distillery was built on. Oloroso is a dry sherry style rich in walnuts, dried fruit and raisins, and three years in these casks left a decisive mark. Stauning's small copper pot stills and intensive production method build character quickly, and that shows clearly in the glass. This is among the earliest commercial releases from the distillery, from a time when total production was vanishingly small.

Bisgaardsmark Børglum Kloster is named after one of Denmark's most remarkable medieval monasteries.

Thy Whisky Vesterhav is a Danish Single Malt Whisky bottled at 50% in a 70 cl bottle. Made from certified organic barley grown in Thy and distilled in-house. Vesterhav is named after the North Sea that characterises the coast and climate of northwest Jutland – and reflects the broad, open nature of Thy in its flavour profile.

Vesterhav is not just a name – it is a character. The whisky is shaped by the northwest Jutland climate that gives slow maturation and a purity in the flavour profile that is clearly different from whiskies from more temperate regions.

Nose

Fresh and open with salt spray and malt, light citrus and a little white blossom. Inviting and clear.

Palate

Juicy and malt-sweet with fresh fruit, a little salt mineral and good fullness. Elegant and light sea air.

Finish

Moderate with freshness and malt sweetness. Clean ending.
