Over the course of the last four years, Danish whiskey from smaller distilleries have taken the international whiskey world by storm! And with good reason. The nature of the Danish and greater Scandinavian countries are ideal for whiskey production. Many Danish whiskies are single malts, like Køge-based Braunstein. In addition, there has been a great deal of interest in Stauning and Thy Whisky.

Because of their fantastic taste, the many Danish whiskies have won various prizes around the world over the past five years. This has cemented Danish whiskey as some of the very best whiskey in the world. It is a wide belief that we can look forward to even more exciting Danish whiskies.

This Thy Whisky No 17 has been named STOVT - an organic Danish Single Malt Whisky at 51,2% Stovt is a very special whisky for Thy Whisky. It is blended from a selection of their single malt whisky barrels. Both bourbon and oloroso sherry casks, with and without smoke, with light and slightly burnt malt types and from different vintages.

Finally, it has been given a short finish in stout casks that have aged Limfjordsporter (their favorite stout) at Thisted Bryghus. This is the third time they have bottled a "Stovt". This time they have turned up the beechwood smoke a bit and the bourbon barrels have a larger part of the credit for the cask character. The whisky is composed of barrels that are 3-6 years old. The result is a lightly smoky whisky with a complex sweetness with notes of bourbon vanilla, fruit, soft toffee, burnt caramel and a hint of sweet licorice. It is an incredibly flavorful and balanced whisky with a long pleasant finish. Only 2097 bottles have been produced Thy Whisky No 17 STOVT

Kornmod is made from the forgotten old Danish barley variety from the early 1900s "Imperial", which Thy whisky has helped to revive and multiply from a handful of kernels stored in a deep freezer in the Nordic Genebank to a quantity that makes sense to malt and make whisky from. The whisky has also been given a genuine Thy'sk cask maturation. Thy Whisky No 20 Maltmod is a single malt whisky shaped and created by experiments in Thy Whisky's own maltings. It is characterized by a rich and alluring aroma of caramel, which stems from experiments in their maltings with dark 'caramel malts', which otherwise hardly ever find their way into traditional whisky production. The intense 'Cara' new make has been aged in 12 small bourbon octaves (50 liters), then larger bourbon casks, and finally blended with two oloroso casks, which have then been given time to accumulate in the barrels.

The result is a whisky with great vanilla sweetness and intense burnt caramel with underlying fruit notes. On the nose, there are notes of leather and cedar with a faint hint of tobacco. The taste starts with sweet vanilla toffee, nougat and a little pickled fruit and ends in burnt caramel with a hint of cloves and oak. A sweet and unconventional single malt with complex flavors and aromas. Only 1634 of this Thy Whisky No 20

Thy Whisky No 23 - Hawboen is composed of 3-8-year-old barrels, some with a mild beechwood smoke, others with our unpeated 'Pale' new make. We have bottled the whisky at 51.5% vol., where the whisky is balanced between strength, intensity, smoothness, and aroma. It is a fruity and mildly beechwood-smoked whisky. The whisky has vanilla sweetness, citrus, smooth caramel, toasted coconut, warm spices, beech sap, a gentle warming smoke, and a hint of a maritime, salty impression.

In addition to a few single casks, "Hawboen" is the first purely bourbon cask-matured whisky, bottled since 2016. It will be the second-to-last bottle in their numbered series (1-24), which concludes in 2024, ten years after their first bottling.

"Thy Whisky No 24 - 8 years" is a bottling of 8-10-year-old bourbon casks, making it our oldest whisky to date. And it tastes absolutely fantastic!
After the long maturation period in the cask, the whisky has developed a wonderfully intense aroma of tropical fruits, vanilla, baked apples, and cream caramel. The whisky is well-oiled, and the aftertaste lingers for a long time. It is the first time that Thy Whisky formally assigns an age statement to a bottle - because they believe it deserves it! In many ways, it showcases the direction in which they plan to work with their bourbon casks in the future.
We are releasing the whisky for sale on Friday, February 9th, at 9:00 PM, marking the 10th anniversary of their very first bottling in 2014.

From Livø, Læsø, Fur and Egholm, a portion of seed from the same organic production was delivered in the spring of 2018 to each of the four farmers on the four islands. A very special malt barley "Odyssey", which is suitable for whiskey production. The goal was to create the best possible malting barley for production. After the harvest in late summer 2018, the barley from each of the four islands was malted separately, so that production was ready to start in spring 2019 at Søgaard's Distillery in Aalborg.

The first whiskey was placed in oak casks, imported from the renowned whiskey brand Jack Daniel's, and then it was just a matter of waiting patiently for three years while the aging took place. The storage is also a chapter in itself. The finished raw spirit was sailed out to Livø, where it was stored at Livø Avlsgård with the married couple Bente and Karsten Kjærgaard. The oak casks were placed in the farm's old barn, with the right temperature and light, as well as daily monitoring, so the final products have therefore been given the best conditions throughout their lifetime. Denmark has therefore received, not just one, but four organic island whiskeys, each with their own recognizable distinctive character and all of very high quality
