Ardor Danish Oak Batch 167 is an organic Danish Single Malt Whisky bottled at 46% at 5 years of age. Distilled by Isle of Fionia / Nyborg Distillery in Nyborg, Funen, and matured in casks made from oak trees at Erholm Estate in Funen – part of the historic Danish "fleet oak" planting. The casks were used as a "boost": the whisky spent a short period on these Danish oak barriques from March 2018 to October 2018 to absorb the powerful tannins and characteristic bitterness of young Danish oak. 954 bottles produced.

Tasting notes

Nose

Beautifully fruity with pears and apricots as the main elements. Hazelnuts and Virginia tobacco lay a nutty, aromatic base, and the fresh oak tannin gives a sharp, bright note.

Palate

Gentle and sweet at 46% with the fruitiness carried from the nose. The oak tannins from the Danish barriques are present as a fresh, lightly astringent frame around the sweet fruit core. A surprisingly elegant balance.

Finish

Medium with lingering pear and apricot sweetness, and a dry oak bitterness in the tail of the close.

Thy Whisky names selected single casks after characters from north Jutland cultural life and folklore. "Kræn Kræmmer" is a traditional Danish name and occupational title – a kræmmer is a merchant, and "Kræn" is a north Jutland dialectal form of the Danish name Kristen. Stauning KAOS is the opposite of the system – a multi-malt whisky that blends grain types instead of keeping to one. The 2016 edition is one of the earliest releases and sets the standard for the series.

Stauning KAOS 2016 is a Danish Single Malt Whisky bottled at 46.5% and made from a blend of malted grain types. Distilled 2011-2013 and released in February 2016. KAOS is Stauning's most complex expression – a counterpoint to the peated single malts, characterised by fruity, creamy notes and elegant complexity. The bottling is non-chill filtered.

Stauning Whisky opened in 2005 in Skjern and has since earned international recognition for its floor malting and copper pot distillation of Danish grain. KAOS represents the experimental side of the distillery – each batch is a new composition.

The organic Funen distillate was finished on a cask from Laphroaig – one of Islay's most famous heavily peated distilleries. The finish adds smoke, peat and iodine to the otherwise clean and organic Danish distillate. The extreme ABV of 69% is uncut and demands attention. A bottling that is unique in every respect – and will never be repeated.

Powerful smoke and peat from the Laphroaig cask. Iodine and coastline. Beneath the smoke the organic distillate is present with grain and a light sweetness.

Palate

Intense and explosive at 69% – water is strictly necessary. Smoke and peat dominate, but there is an underlying Danish organic sweetness behind the Islay character. Iodine and sea salt.

This collaboration pairs Mikkeller's brewing expertise with Braunstein's distillation knowledge. The Oloroso casks contribute rich, nutty notes and a suggestion of dark fruit to the young spirit. The result is an idiosyncratic spirit type that refuses to be called either whisky or beer.
