Danish Whisky

Over the course of the last four years, Danish whiskey from smaller distilleries have taken the international whiskey world by storm! And with good reason. The nature of the Danish and greater Scandinavian countries are ideal for whiskey production. Many Danish whiskies are single malts, like Køge-based Braunstein. In addition, there has been a great deal of interest in Stauning and Thy Whisky.

Because of their fantastic taste, the many Danish whiskies have won various prizes around the world over the past five years. This has cemented Danish whiskey as some of the very best whiskey in the world. It is a wide belief that we can look forward to even more exciting Danish whiskies.

  • Bottle of Ardor Danish Oak Batch 167 Single Malt Whisky from Nyborg Distillery, Funen
    Item no.: 22227865446-10163

The oak trees at Erholm Estate in Funen have been standing for a long time. Two hundred years ago the plan was for them to become warships. Instead they became whisky casks – which is a better idea.

    Expert description

Ardor Danish Oak Batch 167 is an organic Danish Single Malt Whisky bottled at 46% at 5 years of age. Distilled by Isle of Fionia / Nyborg Distillery in Nyborg, Funen, and matured in casks made from oak trees at Erholm Estate in Funen – part of the historic Danish "fleet oak" planting. The casks were used as a "boost": the whisky spent a short period on these Danish oak barriques from March 2018 to October 2018 to absorb the powerful tannins and characteristic bitterness of young Danish oak. 954 bottles produced.

    Tasting notes

    Nose

Beautifully fruity with pears and apricots as the main elements. Hazelnuts and Virginia tobacco lay a nutty, aromatic base, and the fresh oak tannin gives a sharp, bright note.

    Palate

Gentle and sweet at 46% with the fruitiness carried from the nose. The oak tannins from the Danish barriques are present as a fresh, lightly astringent frame around the sweet fruit core. A surprisingly elegant balance.

    Finish

Medium with lingering pear and apricot sweetness, and a dry oak bitterness in the tail of the close.

The oaks at Erholm Estate are part of the royal decree for "fleet oak" issued after the Napoleonic Wars in the early 1800s. Planted to secure timber for new warships that never came – and now they make whisky from them instead. A circle struck in oak.

    Item no.: 22227865400-8451

Six years in cask. Peated single malt at cask strength 60.8%. ROMMER is Whisky.dk's Private Cask from Stauning – one barrel, bottled in 2017, impossible to replicate.

    Expert description

Stauning Private Cask ROMMER Whisky.dk 6 Year 2010/2017 is a Danish Peated Single Malt Whisky bottled at cask strength 60.8%. ROMMER is the name given to this specific Private Cask, owned and matured by Whisky.dk for six years from 2010 to 2017. The peated style draws on Stauning's West Jutland peat, delivering a green and herbal smoke character. Six years brings more integration and depth than younger releases – the smoke is well-integrated with oak sweetness and a complexity that shorter maturations rarely achieve. At 60.8%, this is a powerful, undiluted version of Stauning's peated style.

    Tasting notes

    Nose

Well-integrated smoke with a light herbal edge. Vanilla, gentle citrus and oak sweetness grow beneath the smoke.

    Palate

Powerful and complex. Smoke, spices and a sweetness of vanilla and light caramel. Citrus fruit and pepper spice lurk in the background.

    Finish

Long and warming with smoke and oak persisting. A trace of salt at the very end.

Distilled in 2011 and bottled five years later in 2017, this is a unique bottle that cannot be replicated.

    Expert description

Stauning 1st Edition Traditional 2009/2012 is a Danish Single Malt Whisky bottled at 63.3% and matured for 3 years. Distilled in 2009 and released on 30 June 2012. Only 728 bottles. It is the very first Stauning whisky ever released to the market – a historic bottle in Danish whisky history.

Stauning Whisky opened in 2005 in an old slaughterhouse building in Skjern, and the early years were marked by passion, experimentation and almost no resources. 1st Edition is an expression of all that: raw, powerful and with a historical significance that transcends any tasting note.

    Tasting notes

    Nose

Powerful and complex. Malt, dried fruit, honey and a touch of oak. The 63.3% is present but approachable with a little water.

    Palate

Intense malt and fruit notes with oak spice and a warm, full-bodied core. Strong but well-balanced for its ABV.

Fary Lochan's Rum Edition series is made by resting the finished single malt in empty rum casks – so-called finishing. It adds an entirely new flavour dimension without erasing the whisky's malt character.

    Item no.: 22227865400-508

Heather on the moors of West Jutland. Stauning has used it since the beginning – an ingredient that gives HEATHER its floral and honeyed character.

    Expert description

Stauning HEATHER September 2017 is a Danish Single Malt Whisky bottled at 48.7% and made with heather added during the drying of the malt. Distilled 2013-2014 and released in September 2017. Heather is a traditional ingredient in Nordic brewing and distilling, and Stauning revives the tradition in the HEATHER series. The result is a whisky with a unique floral and honeyed profile – clearly different from the rest of Stauning's range.

HEATHER is one of Stauning's most original expressions. It is not just a variation on a theme – it is a whisky that could not come from any other region. The Jutland heather moor is the invisible ingredient.

    Tasting notes

    Nose

Heather and wildflowers, light fruits and a discreet honey sweetness. Very aromatic and fresh.

    Palate

Kræn Kræmmer. A name, a character, a cask. Thy Whisky Fad no 6 Kræn Kræmmer is one of the named single cask expressions from the distillery – a series that tells stories through each individual cask.

    Expert description

Thy Whisky Fad no 6 Kræn Kræmmer is a Danish Single Malt Whisky bottled at 50.4% in a 70 cl bottle. Distilled and matured at Thy Whisky Distillery in Thy. Fad no 6 is the sixth cask in the distillery's named cask series, and "Kræn Kræmmer" is the character name associated with this specific cask. Thy Whisky names selected single casks after characters from north Jutland folklore and cultural life – a way of giving each cask an identity and narrative that extends beyond the cask number alone.

50.4% is a more approachable strength for a single cask release and lets the profile's nuances come through without requiring dilution. Fad no 6 Kræn Kræmmer is a single cask and is produced in a naturally limited number.

    Tasting notes

    Nose

Elegant and complex with honey, light fruit nuances, vanilla and a soft oak character. Refined and well-rounded.

    Expert description

Stauning KAOS 2016 is a Danish Single Malt Whisky bottled at 46.5% and made from a blend of malted grain types. Distilled 2011-2013 and released in February 2016. KAOS is Stauning's most complex expression – a counterpoint to the peated single malts, characterised by fruity, creamy notes and elegant complexity. The bottling is non-chill filtered.

Stauning Whisky opened in 2005 in Skjern and has since earned international recognition for its floor malting and copper pot distillation of Danish grain. KAOS represents the experimental side of the distillery – each batch is a new composition.

Nyborg Distillery Bourbon Cask is an organic Danish Single Malt Whisky bottled at 59% cask strength from the distillery's early production at Ørbæk Brewery. Expert description

Nyborg Distillery Laphroaig Finish is an organic Danish Single Malt Whisky bottled at 69% cask strength from the distillery's early Ørbæk era. The organic Funen distillate was finished on a cask from Laphroaig – one of Islay's most famous heavily peated distilleries. The finish adds smoke, peat and iodine to the otherwise clean and organic Danish distillate. The extreme ABV of 69% is uncut and demands attention. A bottling that is unique in every respect – and will never be repeated.

    Tasting notes

    Nose

    Expert description

Oloroso Cask Black Mikkeller Spirits Small Batch is a New Make Malt Spirit at 43%, distilled at Braunstein Distillery from Mikkeller Black imperial stout and briefly matured in Oloroso sherry casks. Oloroso is the driest and nuttiest style within the sherry family. While fino and amontillado are lighter and fresher, Oloroso adds a deeper, more complex sweetness — well-suited to lifting a young, unaged distillate.

What happens when you distil an imperial stout and mature the result in rum casks? Mikkeller and Braunstein found out — and landed on something soft, tropical and hard to categorise.

    Expert description

Rum Cask Black Mikkeller Spirits Small Batch is a Malt Spirit at 43%, distilled at Braunstein Distillery from Mikkeller Black, an imperial stout from Denmark's celebrated craft brewery Mikkeller. The collaboration combines Braunstein's distillation expertise with Mikkeller's brewing knowledge to create a spirit that sits outside easy classification. The malt spirit has been matured in rum casks, which contribute sweetness, tropical fruit notes and a rounded softness. Not beer, not rum, not whisky — something on its own terms.

    Tasting notes

    Nose

Brown sugar and light caramel. Tropical fruit — banana, mango — mingles with warm sweetness and a touch of vanilla from the rum casks.

    Palate

Soft and rounded with dark sugar, baked fruit and a hint of chocolate from the beer base. The rum cask influence is clear and pleasant.

    Finish

Warm and lightly spiced with lingering sweetness and gentle rum notes. Shorter than an aged whisky, but satisfying.

Mikkeller Black, the beer distilled to make this malt spirit, is an imperial stout at 17.5% ABV — one of the strongest and most complex beers from the Danish craft brewery. Distilling such a heavyweight beer produces a malt base with unusual depth and character.

  • White Dog Mikkeller Spirits Small Batch bottle with dark label
    Item no.: 22227865401-33

White Dog is the spirit in its purest form — before any cask has had its say. Everything you taste is the grain, the fermentation and the distiller. Here it is Mikkeller Black imperial stout, distilled at Braunstein.

    Expert description

White Dog Mikkeller Spirits Small Batch is an unaged New Make Malt Spirit at 42%, distilled at Braunstein Distillery from Mikkeller Black, Mikkeller's powerful imperial stout. White Dog is the American term for unaged, new make spirit — the distillate before wood has had any influence. Here it is used deliberately: no cask maturation, no colour, no wood. Just a clean distillate from a complex beer base, giving a fascinating insight into what the spirit is before the cask takes over.

    Tasting notes

    Nose

Fresh and clear with cereal aromas, light fruit tones and a soft malt sweetness. Clear fermentation character throughout.

    Palate

Clean and direct. Malt, a light fruity sweetness and a suggestion of grain bread. No cask notes — everything is the distillate.

    Finish

Short and clean. The malt lingers briefly and the alcohol has a gentle bite.

    Did you know?

The term "White Dog" originates from the American bourbon tradition, where unaged spirit was historically sold illegally and called "white lightning" or "white dog." Today many distilleries use the term to release their raw, unaged distillate — it is essentially a taste of the whisky's future before the cask gets to work.

    Item no.: 22227865446-9

Cask No 1. Few bottlings in the world carry that weight. The very first cask from Nyborg Distillery – bottled at 58% while the distillery was still based at Ørbæk Brewery. This is the beginning.

    Expert description

Isle of Fionia Cask No 1 is an organic Danish Single Malt Whisky bottled at 58% from the very first cask ever produced at Nyborg Distillery. Made during the Ørbæk era – before the Isle of Fionia brand, before the train depot in Nyborg, before Distillery of the Year 2025. It is the distillery's birth certificate in a bottle. A bottling that combines the historic early Ørbæk character of the organic Funen distillate with the simple, direct expression of a cask from the very first days. A concluded moment in Danish whisky's timeline.

Clean and fresh organic base. Light fruitiness with peach and gentle citrus notes. Light sweetness from the cask. A nose that reflects young, clean organic distillate.

    Palate

Clear and direct at 58%. Fresh grain notes, light fruit and a delicate sweetness from the cask. Simple and authentic – a distillate character in its original form.

    Finish

    Investment potential

High. Cask No 1 is the very first cask from Nyborg Distillery – a distillery that has since won Distillery of the Year 2025. The historical singularity and the past frozen in the bottle make it an extraordinary collector's piece.

    Did you know?

When Nyborg Distillery first opened its doors at Ørbæk Brewery, nobody knew what would come of it. Cask No 1 is the result of the very first batches. The fact that this distillery has since won Distillery of the Year 2025 gives Cask No 1 a historical dimension that very few bottlings will ever achieve.
