Over the course of the last four years, Danish whiskey from smaller distilleries have taken the international whiskey world by storm! And with good reason. The nature of the Danish and greater Scandinavian countries are ideal for whiskey production. Many Danish whiskies are single malts, like Køge-based Braunstein. In addition, there has been a great deal of interest in Stauning and Thy Whisky.

Because of their fantastic taste, the many Danish whiskies have won various prizes around the world over the past five years. This has cemented Danish whiskey as some of the very best whiskey in the world. It is a wide belief that we can look forward to even more exciting Danish whiskies.

From Livø, Læsø, Fur and Egholm, a portion of seed from the same organic production was delivered in the spring of 2018 to each of the four farmers on the four islands. A very special malt barley "Odyssey", which is suitable for whiskey production. The goal was to create the best possible malting barley for production. After the harvest in late summer 2018, the barley from each of the four islands was malted separately, so that production was ready to start in spring 2019 at Søgaard's Distillery in Aalborg.

The first whiskey was placed in oak casks, imported from the renowned whiskey brand Jack Daniel's, and then it was just a matter of waiting patiently for three years while the aging took place. The storage is also a chapter in itself. The finished raw spirit was sailed out to Livø, where it was stored at Livø Avlsgård with the married couple Bente and Karsten Kjærgaard. The oak casks were placed in the farm's old barn, with the right temperature and light, as well as daily monitoring, so the final products have therefore been given the best conditions throughout their lifetime. Denmark has therefore received, not just one, but four organic island whiskeys, each with their own recognizable distinctive character and all of very high quality
