Here at Whisky.dk we absolutely love gin and tonic. We have therefore put together a large selection of the best gin brands and tonic water as well as an exclusive selection of Danish gin. We want to share our great passion and love for gin and tonic, so sit back and enjoy our gin and tonic universe.

Gin is originally from the Netherlands and is a contraction of the French word for juniper. They started mixing alcohol with juniper in the 17th century for kidney pain. This spread to England, and the English soldiers got a taste for it. The gin was later sold at the pharmacy and used against ailments. Today, gin is known for use in drinks such as gin and tonic, dry Martini and Tom Collins.

    The distillery was founded in 2014 by Gerald Koenen and Raphael Vollmar, two entrepreneurs with no background in spirits but a shared passion for creating something new.

    The gin is built on 18 botanicals, including lime blossom, bitter orange, thyme, juniper, cardamom and angelica root, with lime blossom as the leading flavour.

    Just a year after founding, the distillery was named Germany Gin Distillery of the Year at the New York International Spirits Competition in 2015, and the gin has since won several international awards.

    Gin Sul's story doesn't begin in Hamburg, but nearly 3,000 kilometres south, on the wild Costa Vicentina in Portugal, where founder Stephan Garbe found the inspiration for a gin with a southern soul.

    Gin Sul Hamburg Dry Gin is a German Dry Gin distilled at Altona Spirit Manufacture in Hamburg and bottled at 43%.

    The gin was founded in 2013 by Stephan Garbe, whose longing for Portugal and desire to capture the flavours of the Algarve became the recipe behind Gin Sul.

    Botanicals include juniper, coriander seed, Portuguese lemons, rosemary, pepper, lavender, cinnamon and rock rose, a Mediterranean shrub known in Portuguese as "esteva".

    Fresh lemons from Portugal are couriered to the distillery each week and hand-peeled, so fresh peel always goes into the current batch.

    Ravenswood sits north of downtown Chicago, pressed up against an old freight line where grain cars once rolled towards the city elevators. Behind a fairly unremarkable facade, copper stills are humming away. What comes out of them smells more like a Midwestern wildflower meadow than an English gin factory.

    The expert's description

    Koval Dry Gin is an Organic American Dry Gin distilled with 13 botanicals at Koval Distillery in Chicago and bottled at 47%.

    The unusual part of this gin sits somewhere people rarely look: in the base spirit. Most gin producers buy neutral grain spirit by the tanker and add juniper to it. Koval mashes and distills its own, from organic grain grown on Midwestern farms, and every bottle can be traced back to the farm the grain came from. That gives the spirit a bit more body, and you notice it in the texture, which is softer and creamier than a classic London Dry.

    Among the 13 botanicals are juniper, angelica root, coriander, grains of paradise and rose hip. They go into the distillation in two separate stages rather than all at once, and only the heart cut is kept. The result is a gin where juniper is certainly present, but where the floral and citrus sides get to sit beside it instead of being flattened. The water comes from Lake Michigan, and there are no artificial additives and no GMO yeast.

    Koval Distillery was founded in 2008 by Robert and Sonat Birnecker, who both walked away from academic careers to do it. It was the first distillery inside Chicago's city limits since Prohibition. Robert brought the technique from home, from his grandfather's fruit distillery in Austria. The whole production is both certified organic and kosher.

    Tasting notes

    Nose

    Lavender and elderflower arrive first, almost perfumed, with lemon zest and a clear pine note behind them. A little spearmint, and a hint of vanilla if you let the glass rest.

    Palate

    Citrus and pine needles open. Then the floral side comes through with quince and white grapefruit, and juniper runs underneath like crushed berries. The texture is creamy rather than sharp.

    Finish

    Very dry. Anise and peppercorn last longest, with bitter orange peel around the edge, before the whole thing softens into something like rose petals.

    In a converted 18th-century chapel in the small fishing village of Vilanova i la Geltrú on the Costa Daurada, brothers Marc and Manuel Giró created a gin in 2007 that gathers the whole Mediterranean into one bottle, from Spanish olives to Italian basil.

    Marc and Manuel Giró are grandsons of the founder behind the celebrated 1940 Spanish gin GinMG, and carried the family's distilling legacy forward with a new, Mediterranean-inspired concept.

    Four key botanicals define the gin, each sourced from its own Mediterranean country: Arbequina olives from Catalonia, rosemary from Greece, thyme from Turkey and basil from Italy. Citrus botanicals such as Spanish orange peel, lemon peel and bergamot macerate for 40 days before distillation.

    Nine botanicals are macerated and distilled entirely separately in a custom-built Florentine flask still in 250-litre batches. The Arbequina olive is the only olive variety in the world with Protected Denomination of Origin status, and its acidity shifts from year to year, so no two vintages of Gin Mare are identical.

    On Islay's windswept hills, peat bogs and Atlantic shores, a team of foraging experts spent seven months finding the right plants. The result was the world's first Islay Dry Gin, distilled at a whisky distillery.

    The Botanist Small Batch Islay Dry Gin is a Scottish Dry Gin distilled by Bruichladdich Distillery on Islay and bottled at 46%.

    Bruichladdich, founded in 1881, launched the world's first Islay Dry Gin in 2010. The name comes from two local botanists, Dr Richard and Mavis Gulliver, who helped then-master distiller Jim McEwan select the wild botanicals.

    Beyond nine classic botanicals, including wild Islay juniper, cassia bark, angelica root, coriander seed and cinnamon bark, a full 22 wild-growing plants are added, hand-picked from Islay's hills, peat bogs and coastlines.

    The gin is distilled on an antique Lomond still nicknamed 'Ugly Betty', and the whole process from harvest to finished gin takes seven months.

    Tasting notes

    Nose

    The nose is complex and herbal with juniper and citrus, backed by an earthy, coastal note from the wild Islay plants.

    Palate

    The palate is fresh and layered with juniper up front, spiced depth from cinnamon and cassia and a delicate herbal bitterness.

    Finish

    The finish is long and herbal, with a last trace of citrus and coastal salinity.
