Martes Santo Organic is a Spanish London Dry Gin distilled at the family-run Destilerías Martes Santo in Andalusia and bottled at 40%.
The distillery has been family-owned since 1870 and is one of the last active Spanish distilleries still firing its stills with direct flame and oak wood rather than steam or electricity.
The organic recipe is built on juniper, orange and lemon peel, cassia bark, angelica root and grains of paradise, joined by jasmine flower and walnut from the house's secret recipe.
The gin is distilled in the classic London Gin style, where all botanicals are added during distillation for a clean, rounded character.
Tasting notes
Nose
The nose is fresh and citrusy with juniper up front, spiced with cassia bark and a light jasmine sweetness.
Palate
The palate is round and warm with clear juniper, orange and spiced depth from grains of paradise.
Finish
The finish is dry and nutty, with a last trace of walnut and citrus.
