The cocktail dates back to the prohibition era in the USA. Back in the 20s, bees' knees meant: Something is good.
Bees' Knees went from slang to cocktail name when Prohibition-era America started masking the taste of bad gin with honey and lemon, inventing a new drink.

It's the honey that makes Bees' Knees special - it takes on a sweet, rounded flavor with floral notes. The lemon juice provides the necessary balance to keep it from being overly sweet.

How to make it:

  • Make honey syrup by diluting an acacia honey with a small amount of water. 5 parts honey to 1 part water.
  • Mix the ingredients in a shaker. Use a measuring cup to get the ratios just right.
  • Add plenty of ice and shake for at least 8 seconds.
  • Strain the ice and serve in a cocktail glass.
  • Garnish with lemon zest and/or freshly ground pepper/lavender flower.
