Taiwan's first rum distillery sends its cane juice through 15 days of dunder fermentation and two long distillations, before it lands in a brand-new, heavily charred American oak cask called White Alligator.

Renaissance 2018 White Alligator Single Cask is a Taiwan Rum, distilled from Taiwanese sugar cane molasses and aged 3 years in a new American oak cask, bottled at 64.8%.
Renaissance Distillery, founded in 2017 by Olivier Caen and Linya Chiou, was the first rum distillery in Taiwan and has since built a name for high-ester, intense rum styles. This release undergoes a 15-day fermentation, where dunder is added to boost ester content, followed by two pot still distillations, first for 7 hours, then for 13 hours. The name White Alligator refers to the brand-new American oak cask with heavy char, where the characteristic cracked surface resembles alligator skin. Only 205 bottles were drawn from this single cask.
The result is an intense, high-ester rum with pronounced fruitiness and a powerful, spiced wood depth from the new cask.
Tasting Notes
Nose
Densely sweet with raisin, caramel, cinnamon and clove, plus plum juice, port wine and blackberry jam.
Palate
Intense and full-bodied with strawberry and papaya, toasted spice and prominent oak.
Finish
Long with cacao nibs and persistent wood depth from the new, heavily charred cask.
