    El Dorado 25 Year Guyana 1990 is a Guyana Rum matured in ex-bourbon casks and bottled at 43%.

    The rum was created to mark the turn of the millennium and comes from Demerara Distillers in Guyana, which distils on a collection of historic stills, including the Port Mourant pot still, the Enmore wooden coffey still and the Versailles pot still. After distillation, the rum is matured for at least 25 years in casks that previously held bourbon, giving it, over the years, a silky-smooth structure many compare to old cognac.

    Tasting notes

    Nose

    Dark caramel, molasses, baking spice and tobacco, underpinned by a deep, rounded oak tone.

    Palate

    Sweet and syrupy with brown sugar, cloves, nutmeg, raisins, dates and a hint of cigar tobacco.

    Finish

    Long, soft and mellow, where the oak and the syrupy sweetness carry all the way through.
