Pork roast with apple - onion and whisky sauce, serves 4 with Auchroisk Whisky from Murray McDavid
1 kg good and carefully scored pork roast,
2 apples,
2 large onions,
2 baking potatoes,
24 Brussels sprouts,
1/4 whipping cream,
a little fresh thyme,
1 tbsp black peppercorns,
4 cl Auchroisk Murray McDavid Single Malt Bourbon Quarter Cask Finish,
four cake rings with a diameter of about 10 cm.

A little oil for the potatoes.
• Remove the bones from the roast and save them for the grill on another good day. Cut the roast first lengthwise
and then into pieces that fit the cake rings. Rub the rind well with salt.
• Halve the apples and remove the cores. Peel and halve the onions. Cut the tips off all of them
so they have a flat surface to stand on.

• Place the cake rings on parchment paper in a suitable baking dish, and layer first a piece of onion, then a piece of apple, and finally a piece of pork roast on top. Put it all in the middle of the oven at 180 degrees Celsius with convection for an hour.

• Meanwhile, coarsely grate the peeled baking potatoes, squeeze out the liquid with your hands, and set aside.

• Take the baking dish out of the oven and remove the meat. Use a spatula to lift the cake rings and set them aside. Place the meat pieces back on the baking dish and then turn up the heat to 220 degrees Celsius and bake until the crackling is crispy.

• Make four pancakes from the grated potatoes, pour oil on a hot pan, and fry them crispy on each side.

• Steam the Brussels sprouts al dente in a little butter and a little water. Remember to season with a little salt.

• Arrange your rösti on four hot plates and pour the liquid from your baking dish into the pan. Let it simmer a bit, pour in whisky, black peppercorns, and whipping cream. Bring it all to a boil while stirring well.

• Cut the onion and apple free from the cake rings and place them on top of the potato rösti. Top with the small roasts and place the Brussels sprouts in a ring around them.

• Taste the sauce and distribute it over the four plates. Sprinkle fresh thyme on top.

The maturation and aging of whisky are arguably the most crucial aspects of the life of this exquisite spirit. In brief, one pours their clear and distilled spirit into an oak cask and waits. The art lies in choosing the right cask and carefully monitoring how long the maturation process should last before the whisky is ready to be bottled. It takes a minimum of three years. At Murray McDavid, the entire process is uncompromising. Firstly, they select and acquire only the best Scotland has to offer. Some of it is entirely new and "virgin" spirit made from the finest malt and distilled to perfection. Others have already begun their maturation process and only lack the final cask aging before they are ready.

Next comes the choice of casks. Here, oak casks from the finest European vineyards and whiskey producers in the USA are found and purchased, allowing them to exploit the right mix of the best blends for the specific cask type that can optimize the final product.

This single malt from the Auchroisk distillery has received its finish from small bourbon casks and is an excellent example of the art of choosing the right cask for the right blend. The aroma is filled with apple, oak, and thyme, and the taste is complemented with heather honey, cardamom, and vanilla. The long and pleasant finish comes with caramel as well as dry oak and honey.

Over the spring, the two owners of the Nordic region's largest liquor store, Ulrik Bertelsen and Henrik Olsen, have been working to realize a long-standing dream.
