MULD is what the soil can do. Sall Whisky grows and harvests its own spring barley on its own fields in East Jutland — and here begins the story of a whisky that genuinely tastes of the place it came from.

    Expert description

Sall Whisky MULD 1.2 is a Danish Single Malt Whisky matured in ex-bourbon casks and bottled at 50.9% Vol. It is the second release in the MULD series — a distillate-driven expression where the character of the grain and malt takes precedence over cask influence.

Sall Whisky is a Single Farm Single Malt distillery near Ebeltoft in Central Jutland, built around a commitment to full traceability from field to bottle. MULD 1.2 is produced from Prospect and Evergreen spring barley grown on the Kvolbaek and Stadsaard fields, malted as Pale and Vienna for a balanced, fruity malt profile. Yeast strains Distillamax MW and Kveik Hornindal add further complexity. Three years in ex-bourbon casks have given light fruit notes and a gentle sweetness without overshadowing the clean, terroir-driven malt character. Bottled in 624 numbered bottles of 70cl — 100% organic and traceable to field and batch.

    Tasting notes

    Nose

Fresh and malt-forward. Green apple and pear open things up, with honey biscuit and a light nutty note in the background. Gentle floral quality — almost like freshly malted barley.

    Palate

Sweet and direct. The malt character is front and centre, not overshadowed by the cask. Light honey, fresh citrus and a hint of ginger give a lively, clean profile.

    Finish

Short to medium with a fresh fruity tone and gentle warmth. Like buttered toast — simple and satisfying.

    Did you know?

MULD is the Danish word for the uppermost, nutrient-rich layer of soil — and this is exactly what Sall Whisky has built its entire identity around. Every element of production in MULD 1.2 is traceable to a specific field plot and barley variety, with batch number and field data on each bottle.

Frequently asked questions about Sall Whisky MULD 1.2

What is the MULD series from Sall Whisky?

MULD is Sall Whisky's core Single Malt series — an expression that places the clean character of the grain and malt at the front, ahead of cask influence. The series is released in successive editions (1.1, 1.2 and so on), allowing drinkers to follow how the distillery's style develops.

What does Sall Whisky MULD 1.2 taste like?

Fresh and malt-forward with green apple, pear and honey biscuit on the nose. The palate is sweet and direct with light citrus and ginger. It is a whisky that stays close to the raw material — the terroir of the East Jutland fields comes through clearly.

    What is single farm whisky?

Single Farm means the barley for the whisky was grown, harvested and processed on one and the same farm. It is an expression of complete traceability — you can follow the whisky's origin all the way back to a specific field and season.

What is Kveik yeast and what does it do to the flavour?

Kveik is a traditional Norwegian yeast strain that works quickly at high temperatures, producing fruity, complex ester notes — often flowers, orange and tropical fruit. Sall Whisky uses Kveik Hornindal in combination with Distillamax MW for a distinctive yeast profile.

What is the difference between MULD 1.1 and MULD 1.2?

Both releases share the Single Farm philosophy and core malt character. MULD 1.2 is the second release and may differ in field selection, yeast combination and cask allocation — showing how the distillery refines its approach over time.

Is Sall Whisky MULD 1.2 a good gift?

Yes — the story alone makes it memorable. Traceability, organic farming and a genuine Single Farm philosophy give it a narrative that appeals to whisky enthusiasts and anyone with an interest in craft food and provenance.
