Full-bodied and sweetly spiced, with brown sugar, ginger, raisins and redcurrant jelly. The sherry adds depth without smothering the clean, soft spirit underneath.

Finish

Long and warm, with sticky toffee pudding, blackcurrants and a touch of dried herbs and tarragon. The close is soft but clearly sherry-driven.
