Hampden Estate Rum Fire Jamaican White Overproof Rum 70 cl 63% is an unaged Jamaican White Overproof Rum distilled from molasses in a pot still and bottled at 63%.
Hampden Estate sits in Trelawny on the north coast of Jamaica, a short way from Falmouth, and rum has been made on the estate since 1753. The distillery is known for its high ester style, meaning the aroma compounds that give Jamaican rum its penetrating character of overripe fruit and varnish. Fermentation runs for weeks rather than days, it is started by wild yeast instead of a cultured strain, and it is fed with dunder and acidified organic matter from the estate's own pits.
Rum Fire is the distillery's unaged bottling and the most direct route into that character. It is clear because it has never seen the inside of a cask, and nothing has been added, neither sugar nor colouring. The 63% is not a stunt but the strength the style asks for, carrying the aromatics all the way through a drink instead of drowning in ice and lime.
Behind a bar it is a tool. A Daiquiri built on Rum Fire tastes nothing like one built on a light white rum: pineapple, banana and a saline edge, and it stays put. A small measure goes a long way.
Tasting notes
Nose
Overripe banana and pineapple arrive at once, closely followed by something like varnish and freshly cut timber. Underneath sits a saline note, close to olives in brine.
Palate
Oily and huge. Tropical fruit first, then a peppery warmth spreading out, and a mineral, almost chalky base. The alcohol is obvious, yet it carries rather than burns.
Finish
Long and warm with the fruit hanging on. A dry, salty tone closes it out and keeps reminding you where it came from.

Hampden Estate still keeps its muck pits alive, trenches of acidified organic matter drawn on to feed the fermentation.
