Thy Whisky No 19 PX 50cl / 59,1% Danish Single Malt Whisky Distillery Bottling Only 696 bottles. matured in Ex-PX sherry The whisky is distilled from a blend of pale malt and dark roasted caramel malt, which gives a distinct burnt caramel sweetness to the whisky that plays beautifully with the deep sweet notes of raisins and brown sugar from the old PX cask. The age of the cask is clearly smelled and tasted, with noble, dusty and earthy aromas in the whisky. In the interplay, notes of cocoa and dark chocolate emerge. Underneath the dark spicy aromas, there is still the characteristic fruity character of a Thy Whisky, which creates some lightness and contrast to the intense sweetness. The result is an intense and complex cask strength whisky. We haven't bottled anything like it before.Thy Whisky was born out of the idea of making a distinctive whisky from the good organic grain that they grow themselves on their family farm Gyrup here in Thy. And chasing new flavor notes by working with old and new grain varieties in their malting. After the warm reception of their first whiskies, Thy Whisky has spent the last 2-3 years dedicated to adding more barrels to the warehouse and taking more and more of the production into their own hands. After six months of construction and installation, they are now close to reaching the next big milestone. They have officially opened their Gårdmalteri - which will be the first of its kind in Denmark. It will supply Thy Whisky as well as other microbreweries and distilleries across the country with organic malt.
