Stauning Whisky

Nine friends from Jutland tasted a Scotch single malt on a weekend trip in 2005 and wondered why nobody made whisky in Denmark. Twenty years later, Stauning is proof they were right, a whisky built from scratch with Danish barley, Danish peat, and their own hands on every part of the process.

About Stauning Whisky

Stauning is Denmark's best-known whisky distillery and still the only one that malts its own Danish barley and distils on traditional copper pot stills modelled on Scottish practice. That gives a whisky with a clear handcrafted identity, where every step, from grain field to bottle, happens under one roof in West Jutland. For beginners, Stauning is a surprising and accessible entry into Danish spirits history, while the seasoned collector appreciates how the distillery insists on following the old Scottish principles without compromise, even after growing far beyond the nine friends' original hobby project.

History & background

The story starts in May 2005, when nine friends on a Danish weekend trip enjoyed a glass of Scotch single malt and began wondering why nobody made whisky at home. The climate, the barley and the water were all there. After several years with self-built equipment and meetings with the authorities, the group distilled for the first time on the night between Friday and Saturday in August 2006. A decisive turning point came in 2006, when whisky writer Jim Murray tasted their peated test batch and compared it to 1970s Ardbeg, prompting the friends to scale up their plans significantly. In November 2007 they bought a farm near Stauning, and by 2009 the first malted barley was ready for distillation.

Production & style

Stauning floor-malts its own Danish barley, uses Danish-cut peat for the smoky style, and distils on two copper pot stills, a wash still and a spirit still, faithfully modelled on classic Scottish technique. Both a classic Single Malt Whisky and a rye-based Rye Whiskey feature in the range, both matured across a mix of cask types in the Jutland climate.
