Nine friends from Jutland tasted a Scotch single malt on a weekend trip in 2005 and wondered why nobody made whisky in Denmark. Twenty years later, Stauning is proof they were right, a whisky built from scratch with Danish barley, Danish peat, and their own hands on every part of the process.

    Stauning Smoke Floor Malted Smoked Barley is a Danish Whisky bottled at 47%, made from floor-malted smoked barley. Stauning floor-malts its own grain – a traditional and labour-intensive method abandoned by most modern distilleries – and peats the barley with heather and oak chips from the West Jutland heathlands. The result is a gentle, fresh smoke with a clear connection to the West Jutland landscape.

    The Floor Malted expression highlights the role of floor malting and the resulting depth it brings to the grain.

    Nose

    Gentle, fresh smoke with fruity notes of yellow apple and pear. A green, herbal hint from the heather and light vanilla from the oak.

    Palate

    Clean and fresh. Heather smoke, yellow fruits and light vanilla in a balanced expression. Approachable without lacking character.

    Finish

    Relatively short with fresh smoke and a light fruit note. Clean and elegant.

    Stauning Smoke Tawny Port Cask Finish Limited Edition is a Danish Whisky bottled at 50.3% without chill filtration. The base is Stauning's Smoke – made from floor-malted smoked barley peated with heather and oak chips – which has then been finished in Tawny Port casks. Tawny Port is an oxidatively aged fortified wine with notes of nuts, caramel and dried fruit, adding sweetness and softness to Stauning's characterful smoke.

    This is a Limited Edition release, produced in limited numbers.

    Fresh smoke and dried fruit. Almonds and caramel from the port casks with Stauning's heather-smoke in the background.

    In 2010, Stauning was still nine friends with a shared dream, working out of an old meat-processing plant in Skjern. This cask is from that era – three winters in Oloroso sherry wood, bottled in 2013 with sherry written all over it.

    Stauning Traditional Oloroso Cask 2010/2013 is a Danish Single Malt Whisky matured in Oloroso sherry casks and bottled at 52.8%. The Traditional expression is Stauning's unpeated single malt built on malted barley – the foundation the distillery was built on. Oloroso is a dry sherry style rich in walnuts, dried fruit and raisins, and three years in these casks left a decisive mark. Stauning's small copper pot stills and intensive production method build character quickly, and that shows clearly in the glass. This is among the earliest commercial releases from the distillery, from a time when total production was vanishingly small.

    Nose

    Dried apricots and raisins upfront. Vanilla, light oak and a nutty undercurrent from the sherry drum. A hint of dried orange peel.

    Palate

    Creamy and full. Christmas cake, dark raisins and sherry sweetness. Spices – star anise and black pepper – arrive mid-palate.

    Finish

    Long and warming. Sherry tannins linger alongside a gentle dark chocolate bitterness.

About Stauning Whisky

Stauning is Denmark's best-known whisky distillery and still the only one that malts its own Danish barley and distils on traditional copper pot stills modelled on Scottish practice. That gives a whisky with a clear handcrafted identity, where every step, from grain field to bottle, happens under one roof in West Jutland. For beginners, Stauning is a surprising and accessible entry into Danish spirits history, while the seasoned collector appreciates how the distillery insists on following the old Scottish principles without compromise, even after growing far beyond the nine friends' original hobby project.

History & background

The story starts in May 2005, when nine friends on a Danish weekend trip enjoyed a glass of Scotch single malt and began wondering why nobody made whisky at home. The climate, the barley and the water were all there. After several years with self-built equipment and meetings with the authorities, the group distilled for the first time on the night between Friday and Saturday in August 2006. A decisive turning point came in 2006, when whisky writer Jim Murray tasted their peated test batch and compared it to 1970s Ardbeg, prompting the friends to scale up their plans significantly. In November 2007 they bought a farm near Stauning, and by 2009 the first malted barley was ready for distillation.

Production & style

Stauning floor-malts its own Danish barley, uses Danish-cut peat for the smoky style, and distils on two copper pot stills, a wash still and a spirit still, faithfully modelled on classic Scottish technique. Both a classic Single Malt Whisky and a rye-based Rye Whiskey feature in the range, both matured across a mix of cask types in the Jutland climate.
