Scotch Whisky

The first thing people think of when they hear the word Scotland is whiskey, including  Scotch as it is also called. Although Scotland is known for many things other than just whiskey, such as golf, haggis and kilts, it is for good reason that it is precisely the whiskey that, over time, has been dubbed 'Scotch'. The Scots have always been the true pioneers of whiskey making, which many others have tried to emulate, including the Irish, the Americans and even the Danes. However, none of these places has given rise to a similarity between their nation and their whiskeys. Even in Ireland, where one is also very proud of their Irish whiskeys, the impact and marketing effect has been as great as in Scotland.

It is especially because of the very varied nature of the Scottish highland and lowland respectively, as well as a fantastic entrepreneurial spirit that has enabled the Scots to produce such a large and varied selection of whiskey over time.

Generally, Scottish whiskey is divided into three main types: Each whiskey type has its own flavor and aroma, but the most prevalent type of Scotch Whiskey is Malt Whiskey. It is also from here that one has the very well known Single Malt Whiskeys, which is what most associate with Scottish whiskeys.

Find the right whiskey for your Scotch and soda

It's not just the whiskeys that 'Scotch' has become synonymous with. The same goes for drinks, specifically the legendary Scotch and soda cocktail. This cocktail originated in the USA in the 19th century as part of the highball trend imported to the United States by Englishmen.

Scotch and soda basically consists of Scotch whiskey and carbonated water - these can be both Blended Whiskeys, Grain Whiskeys and Single Malt Whiskeys. However, most people here agree that Single Malt Whiskeys are the best for this particular drink. Therefore, if you want an exclusive version of "Scotch and Soda", we highly recommend you use a Glenlivet Scotch or a Macallan Scotch.

How to make the drink:

Pour two parts of Scotch Whiskey into a glass and six parts of carbonated water. That is it! Here you can choose to use ordinary carbonated water or carbonated water with citrus as you prefer.

A "Scotch and Soda" can be a great way to start drinking whiskey, as the carbonated water makes the drink even more fresh, which especially young palates prefer.

    Expert's Description

    Bunnahabhain 2010/2021 Lady of the Glen 10 Years Old is a Single Islay Malt Scotch Whisky from an oloroso sherry hogshead, bottled at cask strength, 58.6%.

    The whisky was distilled in 2010 and bottled in January 2021 from cask #901213, where the oloroso sherry maturation has added plenty of flavour to the relatively young whisky. Only 325 bottles came from this single cask.

    Like the rest of Lady of the Glen's range, it is both unfiltered and free from added colour, letting the sherry cask's full character shine through.

    On the nose, you’ll find classic Cambus notes: vanilla, crème caramel, light coconut, ripe pears and a soft, creamy sweetness.     Not many people are left who remember Cambus actually running. The distillery closed in 1993, and all that's left now are the casks, quietly holding onto whatever they still have to say.

    This bottle is part of the Curators Cut Edition from Woodrow's of Edinburgh, an independent bottler based in Leith. The spirit was distilled on the 29th of November 1991 at Cambus, one of Scotland's major Lowland grain distilleries, which shut its doors for good in 1993. Today the old site has been reduced to a cooperage for Diageo, no more distilling, just cask repair.

    34 years on cask 103260A, a 2nd fill puncheon, before being bottled on the 14th of April 2026. That's a long time for a grain whisky to sit, but it's exactly what makes this one worth paying attention to: the cask has had plenty of time to work without ever drowning out the light, elegant character grain whisky is known for. Only 275 bottles came from it.

    Tasting Notes

    Nose

    Vanilla fudge and white chocolate come first, followed by caramelised sugar and ripe pear. Toasted almonds sit somewhere in the background, along with a touch of oak that never overstays its welcome.

    Palate

    Creamy, almost silky on the tongue. Toffee and vanilla custard move into baked apples and pears, while a light touch of oak keeps everything tight and balanced.

    Finish

    Long and gentle. Vanilla custard and light oak linger alongside soft fruit notes, sweet without ever becoming heavy.

    Pedro Ximenez is the sweetest sherry that exists – thick, dark and almost syrupy. When Caol Ila's peat smoke encounters seven months in PX hogsheads, the result is surprisingly subtle: the sweetness works its way into the smoke and gives it a fruity, dried dimension.

    Caol Ila 2014/2021 Murray McDavid 6 Years Benchmark Series is an Islay Single Malt Scotch Whisky matured in bourbon hogshead casks with a finish in Ximenez-Spinola PX sherry hogshead casks (nos. 2005618/19/23), bottled at 46% without chill filtration and with natural colour.

    Murray McDavid's Benchmark Series is an experimental line that systematically explores cask combinations in larger batches. The PX finish here lasts seven months – short enough to preserve Caol Ila's character, long enough for the Spanish dessert wine to leave its mark.

    1,242 bottles were produced. Ximenez-Spinola is one of the most acclaimed PX houses in Jerez, and it is from them that Murray McDavid sourced these casks.

    Tasting notes

    Nose

    Dried fruit – raisins and dark plums – blends with Caol Ila's maritime smoke. A note of mocha and orange peel gives depth.

    Palate

    Delicate and fruity. Smoke and PX sweetness find each other in good balance. Mocha, dark dried fruit and a soft, lightly oily texture.

    Finish

    Gentle and lingering. Smoke and sweetness fade side by side with a fresh note of smoke and fruit at the end.

    Caol Ila 2014/2021 Murray McDavid 6 Years Benchmark Series is an Islay Single Malt Scotch Whisky matured in bourbon hogshead casks with a finish in first-fill Cognac casks (nos. 1925785/193/194), bottled at 50% without chill filtration and with natural colour.

    Murray McDavid's Benchmark Series systematically experiments with unusual cask combinations in larger batches. This batch produced 1,694 bottles. The 14-month finish in Cognac casks contributes a sweet, lightly winey complexity lifting it above a simple bourbon profile.

    Caol Ila at six years is fresh and direct – the smoke is clear, the distillate body is present, and the Cognac finish adds a sweeter frame without erasing the distillate's maritime character.

    Nose

    Sweet and smoky at once. Sweet peat, ginger and apple – the Cognac cask adds a lightly fruity glow behind Caol Ila's typical maritime smoke.

    Palate

    Soft and fruity with good body. Caramel and smoke meet notes of ginger and apple. The Cognac sweetness is discreet but notable.

    Finish

    Clean and fresh with salted caramel and a light medicinal Caol Ila note at the end.

    Pauillac casks come from the Pauillac wine district in Bordeaux – home to Chateau Lafite Rothschild, Mouton Rothschild and Latour. The casks are laden with red Bordeaux wine and add tannin-rich, fruity and slightly earthy notes to spirits that have rested in them.

    Murray McDavid's Benchmark Series puts the distillate's character at the centre and finds casks that lift it without overpowering it. Eight years and 50% in Pauillac casks give a Caol Ila with an unexpected winey depth.

    Nose

    Smoke and dark fruit – blueberry and cherry from the wine cask, with Caol Ila's salty maritime smoke in the background. A hint of earth and tannins.

    Palate

    Smoke and wine sweetness in good balance. Dark berry fruit, salt and a touch of Bordeaux tannins. Good body at 50%.

    Finish

    Peat and fruit alternate in a medium-length finish with a light, dried fruit note at the end.
