Scotch Whisky

The first thing people think of when they hear the word Scotland is whiskey, including  Scotch as it is also called. Although Scotland is known for many things other than just whiskey, such as golf, haggis and kilts, it is for good reason that it is precisely the whiskey that, over time, has been dubbed 'Scotch'. The Scots have always been the true pioneers of whiskey making, which many others have tried to emulate, including the Irish, the Americans and even the Danes. However, none of these places has given rise to a similarity between their nation and their whiskeys. Even in Ireland, where one is also very proud of their Irish whiskeys, the impact and marketing effect has been as great as in Scotland.

It is especially because of the very varied nature of the Scottish highland and lowland respectively, as well as a fantastic entrepreneurial spirit that has enabled the Scots to produce such a large and varied selection of whiskey over time.

Generally, Scottish whiskey is divided into three main types: Each whiskey type has its own flavor and aroma, but the most prevalent type of Scotch Whiskey is Malt Whiskey. It is also from here that one has the very well known Single Malt Whiskeys, which is what most associate with Scottish whiskeys.

Find the right whiskey for your Scotch and soda

It's not just the whiskeys that 'Scotch' has become synonymous with. The same goes for drinks, specifically the legendary Scotch and soda cocktail. This cocktail originated in the USA in the 19th century as part of the highball trend imported to the United States by Englishmen.

Scotch and soda basically consists of Scotch whiskey and carbonated water - these can be both Blended Whiskeys, Grain Whiskeys and Single Malt Whiskeys. However, most people here agree that Single Malt Whiskeys are the best for this particular drink. Therefore, if you want an exclusive version of "Scotch and Soda", we highly recommend you use a Glenlivet Scotch or a Macallan Scotch.

How to make the drink:

Pour two parts of Scotch Whiskey into a glass and six parts of carbonated water. That is it! Here you can choose to use ordinary carbonated water or carbonated water with citrus as you prefer.

A "Scotch and Soda" can be a great way to start drinking whiskey, as the carbonated water makes the drink even more fresh, which especially young palates prefer.

    The Legendary 2015/2023 is a 7-year-old Single Malt Scotch Whisky from Blackadder's Raw Cask series, bottled at full cask strength of 59.2% ABV.

    The whisky was distilled on 23 June 2015 and bottled in January 2023, from a single cask, Cask No. 2023-05, a medium toasted Fine Grain French Oak cask. The French oak has given the whisky a distinctly spiced, lightly sweet character that sets it apart from the more common American or European oak.

    The Raw Cask series is Blackadder's most unfiltered release: the whisky is neither chill-filtered nor mechanically filtered, and the bottle retains natural oils and fats from the cask to ensure the most natural tasting experience possible.

    Only 615 bottles exist of this particular single cask release.

    Nose

    Toasted French oak and warm spice meet a light sweetness of honey and ripe apples.

    Palate

    Deep in Speyside, at a distillery most people only know as a contributor to J&B, a single cask quietly aged for over a decade. Distilled in December 2012, finished in an ex-Banyuls cask — a rare fortified wine from the southern French borderlands — and bottled at full cask strength for Lady of the Glen. 295 bottles. That is all there is.

    Glen Spey 2012/2023 Lady of the Glen 10 year is a Speyside Single Malt Scotch Whisky matured in a hogshead and finished in an ex-Banyuls cask, bottled at cask strength 58.4% by Lady of the Glen. Glen Spey distillery in Rothes is one of Diageo's most understated gems. Founded in 1878 by grain merchant James Stuart, sold to W. & A. Gilbey in 1887 as the first Scottish distillery to come into English ownership, and since then primarily used for blending — J&B is its principal customer. The characteristic purifiers on the spirit stills create a light, floral and delicate spirit. Lady of the Glen (Hannah Whisky Merchants) is an independent bottler founded by Gregor Hannah, specialising in single cask bottlings at natural strength, without colouring or chill filtration.

    This bottling rested in a hogshead with a finishing period in an ex-Banyuls cask — Banyuls is a sweet, oxidative dessert wine from Roussillon in southern France, related to tawny port. It lends the light Glen Spey character a layer of dried fruit, spice and a gentle vinous depth rarely seen from this distillery. Bottled on 5 April 2023 after precisely 10 years and 4 months — 295 hand-numbered bottles.

    Tasting notes

    Nose

    Spiced apple and dried flowers open first, followed by flaked almonds, orange peel and red grapes from the Banyuls cask. Beneath it all, a light malty sweetness and a trace of vanilla.

    Palate

    Vanilla and freshly baked strudel with gingerbread and cooked berries. The high cask strength of 58.4% delivers a powerful punch that opens beautifully with a single drop of water.

    Finish

    Long and spicy with candied orange and white chocolate. The Banyuls cask leaves a gentle, vinous roundness deep into the finish.

    September 2015, the distillery’s second year of operation. Cask 588 was filled with peated spirit and stood untouched for almost a decade before being emptied for one Danish importer. Two hundred and forty-eight bottles, and among the very first single casks Ardnamurchan released to a single customer.

    Ardnamurchan AD 09:15 Cask 588 is a Highland Single Malt Scotch Whisky matured in a peated 1st fill American ex-bourbon barrel and bottled at 59.8% cask strength. The cask was filled in September 2015 and emptied in 2024, giving 248 bottles released exclusively for FC Whisky.

    A first fill American ex-bourbon barrel is active: it gives vanilla, coconut and a clear sweetness that normally settles over a spirit. Here it meets peated spirit, and the result is a whisky where the sweetness and the smoke share the space rather than fighting for it.

    Ardnamurchan began distilling in July 2014, so a cask from September 2015 comes from the distillery’s earliest years. The whisky is neither chill filtered nor coloured.

    Tasting Notes

    Nose

    Peat smoke first, with vanilla and coconut right behind from the American wood. Salt and white pepper sit underneath, along with a clear maritime character that the peninsula’s seaside setting provides.

    Palate

    Peated and direct. Vanilla, salt and white pepper open, then the smoke arrives at full weight along with a dry oak note. The texture is oily, and at 59.8% there is plenty of concentration. Maritime in both nose and palate.

    Finish

    Long and dry. Smoke, salt and pepper, with a final vanilla sweetness beneath it all.

    The build is different from the other finish releases. Here sherry casks are selected from the Glencadam warehouses and married with bourbon casks before the whole batch gets its finishing period in oloroso. That gives a more thoroughgoing sherry character than a straight finish would. The whisky is non-chill filtered and carries natural colour.

    Oloroso is the dry sherry type. It matures in contact with air and develops nuts, dried fruit and a firm bitterness rather than the syrupy sweetness of PX. On the fruity Glencadam spirit that gives a balance between the brightness of the house and the depth of the sherry.

    Rich sherry with sultanas and sweet spice, over a base note of bright Glencadam fruit. There are nuts and dried apricot behind.

    The difference from a first fill is marked. A second fill cask gives up less vanilla, less colour and less tannin, so Ardmore’s own peated character gets far more room. What Islay phenols remain in the staves are correspondingly muted, sitting as a suggestion rather than a layer.

    Thirteen years is a long time for a cask that gives little. The result is a whisky where the spirit stands at the front and the wood keeps to the background. The whisky is neither chill filtered nor coloured.

    The bottling works as the entry point to the distillery range. 1st fill bourbon casks lay vanilla and bright fruit in, and the light peating gives a smoke note that sits as a breath rather than a layer. The 40% makes the whisky easy to drink, but it also makes it less concentrated than the rest of the line-up.

    Glen Scotia is a small distillery with only one pair of pot stills. Capacity is modest by modern standards, so the entire output has to cover the standard range, the festival bottles and the casks sold on to independent bottlers.

    Bladnoch Liora is a Lowland Single Malt Scotch Whisky matured in Ex-Bourbon and New Oak and bottled at 52.2% without chill filtration and without added colour.

    The combination of refill bourbon casks and new American oak is chosen to set the distillery's fresh apple character against toasted caramel and spice. New oak gives up considerably more tannin and vanillin than a refill cask, which is why it is usually used in smaller proportions.

    Liora belongs to Bladnoch's named series, where the age statement is dropped in favour of the cask make-up. The high bottling strength is part of the concept and makes the whisky more concentrated than the Lowland style normally is.
