New exciting Cask Experiment #3 Whisky from Mosgaard
CES #3 is triple aged - a total of 5 years old in different casks. First in Ex. Bourbon quarter casks for 2.5 years old, then in Ex. Rioja quarter casks for just over 1 years old, and finally in Ex. Madeira Boal cask.
Again, we are in a wild experiment to pick up notes from the different casks and balance the flavors from the casks that cannot stand alone. The presumption in Ex. Bourbon barrels gives a lovely vanilla and almond sweetness, which is the foundation before the second maturation in Ex. Rioja
red wine barrels can't stand alone... But they give a nice fruity flavor to the whisky, a delicious vinosity and spicy tannins, however, it throws the whisky out of balance, and the whole experiment is to pick up these flavor notes and find the balance again.
To
bring the whisky back into
balance, it has been given a third maturation in Ex. Madeira barrels, which gives a vinous sweetness that highlights and balances the acidic and spicy notes from the Rioja barrels without taking over.
The final result after 3 different barrels is a delicious balance and deep flavor notes of vanilla ice cream, raisins, pineapple, blueberries, cinnamon, pears, fresh grapes with a backbone of heavy notes of buttery Brazil nuts, mushrooms and damp forest floor

It is bottled in 380 bottles, all of which are numbered. Whisky comes in a beautiful hand-built box from the Brunshaab cardboard factory, where the old craft of making boxes is kept alive. At the cardboard factory, all processes take place, from recycling cardboard and paper that is turned into new material that the finished box is hand-built from, a proud tradition that we are happy to be able to use again for CES #3
