American whiskey is produced with a minimum of 51% corn, as it is a plentiful crop in the US. American whiskey production began in the northern states and was introduced to the US by Scottish and Irish immigrants. Later, production moved south to Kentucky and Tennessee, two states well-known today for their whiskey production. Bourbon is especially recognized as a product of Kentucky, while a brand like Jack Daniels is the most famous Tennessee whiskey. Westward Stout Cask American Single Malt Whiskey is finished in casks that previously held stout beer from a local Portland brewery, bottled at 46%. Westward Whiskey was founded in Portland, Oregon, in 2004 by Christian Krogstad under the name House Spirits Distillery, rooted in the city's strong craft brewing tradition. The whiskey is brewed like a pale ale, double pot-distilled, and matured in new charred American oak barrels, giving an expression that draws as much on brewing craft as on classic whiskey tradition.

Four Roses Small Batch 2021 Limited Edition is an annual, limited bottling blended from selected, older barrels across several of the house's ten recipes, bottled at cask strength, 57.1%. This release is blended from four recipes with barrels aged 11 to 17 years. Four Roses was founded in 1888 by Paul Jones Jr. The story behind the name has it that Jones proposed to a Southern belle who said yes while wearing a corsage of four roses — hence the brand's name. The current distillery in Lawrenceburg, Kentucky, was built in 1910 in an unusual Spanish Mission style and has been on the US National Register of Historic Places since 2000.
Four Roses is known in the bourbon world for using no fewer than 10 different recipes, combining the house's five yeast strains with two different mash bills. Each yeast strain brings its own character — from spicy and floral to fruity and herbal — giving the distillery an unusually broad flavour palette to blend from.

Kentucky Tavern Kentucky Straight Bourbon Whiskey is an American bourbon, bottled at 40%. The trademark was first registered in 1903 by the Glenmore Distillery Company, which itself had roots dating back to 1849 under the name R. Monarch Distillery, before James and Francis P. Thompson took over and renamed it in 1901. Kentucky Tavern quickly became Glenmore's flagship brand and one of the company's best-selling products throughout the 20th century. During Prohibition, Glenmore operated as a concentration warehouse, bottling and distributing medicinal whiskey. In 1992, the Thompson family sold the company to United Distillers, and in 1994 Kentucky Tavern became part of the Barton portfolio. Today the brand is produced by the Sazerac Company at the Barton Distillery in Bardstown, Kentucky.

Widow Jane was created by aerospace engineer Daniel Preston in Red Hook, Brooklyn, where the distillery is now housed in a former chocolate factory. The whiskey's name and signature water come from the Widow Jane Mine in Rosendale, New York, a historic limestone mine whose cement was used to build both the Brooklyn Bridge and the base of the Statue of Liberty. The mine was named after Jane, wife of the tough mine owner A.J. Snyder, who was beloved by the local community for her kindness. Rosendale limestone contains a higher mineral content than that typically found in Kentucky, and the distillery uses this naturally filtered spring water to proof down each batch.

Minor Case Sherry Cask Finished Straight Rye Whiskey is an American rye whiskey, bottled at 45%, named after Minor Case Beam, a pioneer in the historic Beam family. In 1883, Minor Case Beam founded his own distillery, M.C. Beam & Co., near the town of Gethsemane, Kentucky, rather than joining the family's main operation. While bourbon was king in Kentucky at the time, Minor Case chose to specialise in rye whiskey. Minor Case is the distillery's modern flagship rye, launched in 2017 by two present-day Beam descendants who reopened Limestone Branch Distillery in Lebanon, Kentucky, near the site where their great-great-grandfather once ran his distillery. The whiskey is finished in sherry casks for around 8 months to add depth and spice.

WhistlePig was founded by Dave Pickerell, former master distiller at Maker's Mark and often called the 'godfather of craft distilling', who bought an old dairy farm in Shoreham, Vermont, in 2007. Pickerell took a bold gamble by investing in 10-year-old rye whiskey from an undisclosed Canadian distillery, made from 100% rye, at a time when rye whiskey had not yet been rediscovered by the American market. The distillery officially opened in 2015 in a renovated 150-year-old barn and is today the world's most awarded producer of rye whiskey.

The Jim Beam distillery in Clermont, Kentucky, dates back to 1795, when Jacob Beam sold his first barrel of bourbon under the name "Old Jake Beam". The family has made bourbon in Kentucky for over 200 years and seven generations, and the brand took its current name in 1943 in honour of James Beauregard "Jim" Beam, who rebuilt the distillery in 120 days after Prohibition ended. The recipe is built on the Beam family's traditional mash of corn, rye and malted barley, a blend the family says has stayed largely unchanged across all seven generations.
The extra ageing time draws more character from the charred oak barrels, giving a darker, more complex profile.

The Expert's Description
Roughstock Montana Spring Wheat Whiskey is an American Wheat Whiskey made from 100% wheat, finished in heavily toasted French oak casks and bottled at 45%.
Roughstock was Montana's first legal distillery in over a hundred years, opening after the state overhauled its old Prohibition-era liquor laws in 2005 to allow small craft distilleries. For this whiskey they use hard white spring wheat from Wheat Montana Farms, a variety known as "Prairie Gold" that's normally grown for bread rather than distilling – it carries a higher protein content than the wheat varieties distilleries usually choose. The mash ferments in open-top vats made of old-growth Oregon fir, then goes through double distillation in traditional copper pot stills.
Only the clean heart of the distillate makes it into used Pure Malt casks for maturation, letting the wheat's character come through without being buried in oak. The whiskey then spends a few months finishing in heavily toasted French oak, which layers in extra body and spice on top of the wheat's gentle sweetness.
