La Gauloise Verte is a French herbal liqueur at 48% ABV, a vivid green herbal liqueur made at the Distillerie du Centre in Limoges, founded in 1789.

The recipe is old and shrouded in mystery. After being lost to obscurity for a long time, it resurfaced in a book of magic formulas and recipes for talismans and potions, and the liqueur was revived thanks to the alchemist Edouard Requier. Today the master liquorist blends angelica, St. John's wort, saffron, cardamom and genepi in a double distillation over an open wood fire.

Taste

The nose is intense and herbal with notes of aromatic herbs and a touch of saffron, while the palate is powerful and complex with bittersweet herbal notes and a warm, lingering spiced fullness. The finish is long and herbal.

An old recipe sat gathering dust in the attic above the distillery at Fougerolles. It had been up there long enough that nobody remembered it. In 2017 it was brought back down, and the result now stands in the bottle.

Lemercier Freres Pastis 1811 is a French Pastis produced at Distillerie Lemercier Frères in Fougerolles and bottled at 45%.

Seeds and plants are macerated and distilled: wormwood, gentian, liquorice root and star anise. The gentian is what makes it different, pulling in an earthy bitterness that most pastis from Marseille simply does not carry. The wormwood points straight back at the distillery's absinthe heritage.

Lemercier Frères was founded in 1811 and is the oldest distillery in Fougerolles, in Franche-Comté. The house is known for three things: Kirsch with AOC status, absinthe, and since 2017 this pastis. Pastis 1811 has taken gold at the IWSC.

The bottle holds 50 cl rather than the usual 70.

Tasting notes

Nose

Star anise and liquorice, though milder than you would expect. Underneath sits something green and herbal from the wormwood, and a dry, almost root-like tone from the gentian.

Palate

Soft and round to begin with, liquorice root and anise up front. Then the bitterness from gentian and wormwood arrives and tightens the whole thing up.

Finish

Dry and long. The anise lingers while the herbal bitterness slowly takes over.

The Maraschino tradition in Zadar dates back to the 1500s, when the city was under Venetian rule and Dominican monks first distilled the local Marasca cherry into a sweet, aromatic liqueur. In 1759, Venetian merchant Francesco Drioli began proper industrial production in the city, and through the 1800s several respected houses followed the same path, including Luxardo.

After the Second World War, Zadar's historic distilleries were nationalised and merged into a single company under the name Maraska, founded in 1945. The mini bottle contains the exact same recipe as the full 70 cl bottle and is a great way to get to know the liqueur without committing to a full bottle.

Angelo Molinari, a trained perfumer, began his experiments in 1945 to create a sambuca of the highest quality, and the recipe remains secret to this day. The liqueur quickly became part of Roman bar culture and featured, among other things, in Federico Fellini's "La Dolce Vita". In 1974, the family expanded production with a new facility in Colfelice near Frosinone.
