The grapes for Quarterback are sourced from the same area as Krystina Shiraz. The area, located 3 km north of the village of McLaren Vale, consists of a total of 81 hectares of vineyards, with the majority of these vineyards supplying the grapes for Quarterback. Once the grapes have been pressed, the temperature is lowered to allow the must to rest for 24 hours before fermentation begins. Fermentation takes place over 7-10 days, with the must being pumped over daily to create optimal extraction of color, aroma and flavor aromas. Once fermentation is complete, the wine is placed in French oak barrels (10% new and 90% old). The best barrels are selected, blended, and then the wine is aged at cask for another 6 months before being bottled and released for sale.
