Scotch Whisky

The first thing people think of when they hear the word Scotland is whiskey, including  Scotch as it is also called. Although Scotland is known for many things other than just whiskey, such as golf, haggis and kilts, it is for good reason that it is precisely the whiskey that, over time, has been dubbed 'Scotch'. The Scots have always been the true pioneers of whiskey making, which many others have tried to emulate, including the Irish, the Americans and even the Danes. However, none of these places has given rise to a similarity between their nation and their whiskeys. Even in Ireland, where one is also very proud of their Irish whiskeys, the impact and marketing effect has been as great as in Scotland.

It is especially because of the very varied nature of the Scottish highland and lowland respectively, as well as a fantastic entrepreneurial spirit that has enabled the Scots to produce such a large and varied selection of whiskey over time.

Generally, Scottish whiskey is divided into three main types: Each whiskey type has its own flavor and aroma, but the most prevalent type of Scotch Whiskey is Malt Whiskey. It is also from here that one has the very well known Single Malt Whiskeys, which is what most associate with Scottish whiskeys.

Find the right whiskey for your Scotch and soda

It's not just the whiskeys that 'Scotch' has become synonymous with. The same goes for drinks, specifically the legendary Scotch and soda cocktail. This cocktail originated in the USA in the 19th century as part of the highball trend imported to the United States by Englishmen.

Scotch and soda basically consists of Scotch whiskey and carbonated water - these can be both Blended Whiskeys, Grain Whiskeys and Single Malt Whiskeys. However, most people here agree that Single Malt Whiskeys are the best for this particular drink. Therefore, if you want an exclusive version of "Scotch and Soda", we highly recommend you use a Glenlivet Scotch or a Macallan Scotch.

How to make the drink:

Pour two parts of Scotch Whiskey into a glass and six parts of carbonated water. That is it! Here you can choose to use ordinary carbonated water or carbonated water with citrus as you prefer.

A "Scotch and Soda" can be a great way to start drinking whiskey, as the carbonated water makes the drink even more fresh, which especially young palates prefer.

This 15 year old blended scotch brings together malt and grain whisky from the Highlands, Speyside and Islay under one roof – then matures it all further in GlenAllachie's own cellars.

    White Heather 15 Year Old is a Blended Scotch Whisky at 46% ABV, composed of malt and grain whisky from distilleries across the Highlands, Speyside and Islay, including GlenAllachie's own stocks, and further matured at GlenAllachie in a combination of American oak and sherry casks.

    The brand was originally created by Campbell Distillers in the 1950s but lay dormant for decades until Billy Walker and the GlenAllachie Distillers Company revived it in 2017 and relaunched it in 2021. Today, White Heather is a standalone blended brand drawing on the same cask philosophy that has made GlenAllachie's single malts well known.

    What sets this 15 year old apart from many other blends is the secondary maturation in Pedro Ximénez and Oloroso puncheons alongside Appalachian virgin oak – a combination that gives the whisky far more depth than the blended scotch category usually offers.

    Tasting Notes

    Nose

    Soft and inviting, with honey, ripe apples and a hint of sherry sweetness hinting at the active casks used in maturation.

    Palate

    Round and gently spiced, with caramel, walnuts and a delicate fruitiness from the sherry and PX puncheons.

    Finish

    Gentle and medium in length, with a dry, faintly oaky close from the American oak maturation.

    Old Malt Cask is the range where Hunter Laing always lands on 50%. Not because the number is magic, but because it leaves the cask room to speak without the strength taking over. Here it is a refill hogshead filled in October 2008.

    Glen Garioch 2008/2022 Old Malt Cask 13 Year Old is a Highland Single Malt Scotch Whisky matured in a refill hogshead and bottled at 50%.

    The cask was filled in October 2008 and emptied in February 2022 after 13 years. A refill hogshead gives less wood than a 1st fill cask, and that is exactly why the dry, cereal-driven core of the Glen Garioch spirit stands out so clearly here. The bottling produced 352 bottles, non-chill filtered and with no added colour.

    Hunter Laing runs Old Malt Cask as the workhorse of its ranges. The company was carved out of Douglas Laing in 2013 when the brothers split the portfolio, and Stewart Laing took Old Malt Cask across to the new firm. Since then they have built Ardnahoe distillery on Islay.

    Tasting notes

    Nose

    Dry apple fritters, malt and a hint of heather honey. Over the fruit sits a dusty, almost papery note you often meet in Glen Garioch from used casks.

    Palate

    Cereal and firm. Green apples, pear and pale caramel, with a peppery edge from the 50%. Not sweet, more taut and malt-driven.

    Finish

    Medium and dry. Malt, a little baked apple and a peppery warmth that lingers on the palate.

    Ben Nevis 1996/2021 Wilson & Morgan 25 years is a Highland Single Malt Whisky matured in casks no. 1819 and 1820, finished in Oloroso sherry casks for 30 months and bottled at 52.1 %.

    Wilson & Morgan is an Italian whisky house, run by the Rossi family from Treviso since 1992. The house is known for buying casks early, letting them lie long and finishing them in carefully chosen sherry wood, and that method suits Ben Nevis well, since its spirit carries the weight needed to take the treatment.

    The whisky was distilled in 1996 and bottled in 2021 from two casks kept together throughout. The thirty months in Oloroso are not a short finish but a genuine second maturation, and it reads clearly in the dark fruit and the spice.

    Tasting notes

    Nose

    Dark fruit, walnut and orange peel, with a waxy undertone from the spirit and a hint of leather.

    Palate

    Powerful and dense with fig, raisin and bitter chocolate. The sherry takes up room, but the Ben Nevis weight holds back and lets the spice come through.

    Finish

    Very long and dry with dark fruit, tobacco and a warm spiced close.

    Port Dundas 1996/2022 Signatory 25 år Single Grain Whisky 57,3% is a Single Grain Whisky matured in a hogshead cask and bottled at 57.3% ABV.

    Independent bottler Signatory sources casks from distilleries across Scotland and bottles them under its own series. This 25-year-old Port Dundas was distilled in September 1996 and bottled in April 2022 from a single hogshead cask, at natural cask strength.

    Nose

    Deanston 2008/2022 Signatory Vintage 13 years is a Highland Single Malt Scotch Whisky matured in a first fill sherry butt and bottled at cask strength of 66.8% without chill filtration and without added colouring.

    The cask is numbered 900076, was filled on 13 August 2008 and emptied on 11 March 2022 with an outturn of 574 bottles. The release belongs to Signatory's Cask Strength Collection. A strength that high after thirteen years means the cask lost more water than alcohol — which happens in dry, airy warehouses rather than in damp earth-floored cellars.

    Nose

    Dense and dark. Raisin, date and orange marmalade, with dark chocolate, nuts and a warm spiced note.

    Auchroisk 2007/2021 Mossburn 14 Years Old is a Single Speyside Malt Scotch Whisky matured for fourteen years in a Bordeaux cask and bottled at 46%. It is number 25 in Mossburn’s Vintage Casks range and is neither chill filtered nor coloured.

    Red wine casks from Bordeaux have been used by several bottlers in recent years, because they add red berries and a dry tannic structure instead of sherry’s dried fruit. The effect requires a spirit with the right lightness, as the tannins can quickly take over.

    Auchroisk’s bright, citrus-driven style suits that exercise well. The distillery was built in 1974 to supply malt for the J&B blend, and official bottlings are rare, so independent casks like this one are the usual way in.

    Tasting Notes

    Nose

    Red berries first, with cherry and raspberry clearly to the fore. Vanilla and apple from the spirit sit beneath, and there is a dry, lightly tart note from the wine cask.

    Palate

    Fruity and dry at once. Red berries and a little marzipan open, then citrus, white pepper and a dry tannic edge arrive. At 46% the body is good, and the whisky holds its freshness all the way.

    The distillery sits in Fort William at the foot of Ben Nevis, the highest mountain in Scotland, and has been running since 1825. Nikka bought it in 1989, and a large share of production has found its way into Japanese blends since, which has made official bottlings a smaller part of the house than at most others.

    The ten year old is the standing release of the distillery and one of the clearest expressions of the house style. The combination of bourbon and sherry casks gives both honey and dried fruit, but it is the weight of the spirit itself that carries the whisky, not the wood.
