    The bottle did not say whisky, and that was deliberate. Scottish law requires three years in cask before the word can be used, and Ardnamurchan had not got there yet. So they called it Spirit and sent it out anyway, so people could follow the distillery from the very beginning.

    Ardnamurchan 2017 AD2 Spirit is a Highland Single Malt Spirit from Ardnamurchan Distillery, bottled at 53.6% by Adelphi. It is the distillery’s second annual release of young spirit and may not be called whisky, because it has not spent the three years in cask that Scottish law requires.

    Ardnamurchan was built by the independent bottler Adelphi on the remote Ardnamurchan peninsula on Scotland’s west coast. There had never been a legal distillery on the peninsula before the site opened in 2014. The distillery makes two styles, one peated and one unpeated, matured in American and Spanish oak.

    The run of Spirit releases spans 2016 to 2019, and AD2 is the second in the sequence. The distillery’s first proper Single Malt Whisky arrived in September 2020. The spirit is neither chill filtered nor coloured.

    Tasting Notes

    Nose

    Young and direct. Fresh malted barley first, then pear, green apple and a clear cereal sweetness. A light peat smoke sits beneath it all along with a clean, almost bready note you only meet in spirit that has not had time to be rounded off.

    Palate

    Powerful and raw in the good sense. Malt and grain fill the middle of the mouth, while the cask’s vanilla has only just begun to report in. There is a peated undercurrent and a peppery warmth, and at 53.6% the texture is oily and full.

    Finish

    Medium and dry. Grain, malt and a lightly smoky edge that lets go sooner than an older whisky would.

    Did You Know?

    Ardnamurchan draws all its electricity from a hydro generator on the river beside the distillery. The location is so remote that producing its own power was easier than running a supply network out there. The environmental case was there too, but the practicality came first.

    Six and a half years passed between firing up the stills and anyone daring to write whisky on the label. Ardnamurchan was busy finding the right ratio between bourbon and sherry, and in September 2020 they were done. This is bottle number one in the distillery’s history.

    Ardnamurchan AD 09.20:01 is a Highland Single Malt Scotch Whisky composed of 65% ex-bourbon casks and 35% sherry casks and bottled at 46.8% in September 2020. It is the distillery’s first official Single Malt Whisky, and 15,950 bottles were made.

    The malt is split evenly between peated and unpeated, the choice that has since become the house signature. The smoke works as a floor rather than the main event, and the split between bourbon and sherry gives vanilla, bright fruit and dark sherry fruit in the same glass.

    The distillery was built by the independent bottler Adelphi at Glenbeg on the Ardnamurchan peninsula, looking out over Glenmore Bay towards the island of Mull. Seven years of work went from the idea to the finished distillery, and the doors opened in July 2014. The whisky is neither chill filtered nor coloured.

    Tasting Notes

    Nose

    Fresh malt and bright fruit first, pear and apple from the bourbon casks. Then raisins and orange peel from the sherry portion, and beneath it all a dry peat smoke, clear without being dominant.

    Palate

    Soft and well balanced. Vanilla, honey and baked fruit open, then the sherry’s darker fruit and a lightly spiced warmth arrive. The smoke gathers everything up towards the close. At 46.8% the body is good, and the whisky reads more finished than six and a half years would suggest.

    Finish

    Medium to long. Malt, dark fruit and a dry smoky edge that lingers neatly.

    Did You Know?

    There is no age statement on the bottle, but the arithmetic is easy: the distillery began distilling in July 2014, and the whisky was bottled in September 2020. That gives around six years and two months for the youngest content. The distillery chose to state the dates rather than a number, which says more precisely what you are holding.

    Champagne casks barely exist. The houses in Champagne use their own casks again and again and rarely sell them on. Getting hold of 195 litre casks from Paul Launois in Le Mesnil-sur-Oger is therefore an unusual thing to be able to write on a whisky label.

    Ardnamurchan Champagne Cask Paul Launois AD 06:22 is a Highland Single Malt Scotch Whisky finished in 195 litre champagne casks from Paul Launois and bottled at 57.5% cask strength. The outturn was 2,661 bottles.

    Paul Launois is based in Le Mesnil-sur-Oger in the Côte des Blancs, one of the villages in Champagne classified as grand cru. The area is known for chardonnay, and casks from there carry a far lighter and more mineral character than the sherry and port casks whisky is usually finished in.

    A cask of 195 litres is small enough to work quickly, and at 57.5% the concentration is high. The whisky is neither chill filtered nor coloured.

    Tasting Notes

    Nose

    Green apple and lemon peel first, with a light bready note as from champagne’s time on the lees. Beneath sit Ardnamurchan’s own peat smoke and a maritime salinity, plus vanilla from the bourbon maturation before the finish.

    Palate

    Fresh and taut to begin, which is unusual at this strength. Apple, citrus and a chalky minerality open, then the smoke arrives and brings weight. A fine acidity runs the whole way and keeps the whisky light on its feet despite the 57.5%.

    Long and dry. Citrus, mineral and smoke, with a final malt sweetness lingering.

    Ardor Danish Oak Batch 167 is an organic Danish Single Malt Whisky bottled at 46% at 5 years of age. Distilled by Isle of Fionia / Nyborg Distillery in Nyborg, Funen, and matured in casks made from oak trees at Erholm Estate in Funen – part of the historic Danish "fleet oak" planting. The casks were used as a "boost": the whisky spent a short period on these Danish oak barriques from March 2018 to October 2018 to absorb the powerful tannins and characteristic bitterness of young Danish oak. 954 bottles produced.

    Tasting notes

    Nose

    Beautifully fruity with pears and apricots as the main elements. Hazelnuts and Virginia tobacco lay a nutty, aromatic base, and the fresh oak tannin gives a sharp, bright note.

    Palate

    Gentle and sweet at 46% with the fruitiness carried from the nose. The oak tannins from the Danish barriques are present as a fresh, lightly astringent frame around the sweet fruit core. A surprisingly elegant balance.

    Finish

    Medium with lingering pear and apricot sweetness, and a dry oak bitterness in the tail of the close.

    Nose

    Fresh and explosively fruity – green apples, young pear and loose vanilla from the bourbon oak. A light sweetish note of preserved fruit complements the clean malt base.

    Light, fruity and sweet with classic bourbon cask character. Green fruit and juicy apple dominate, and at 59.8% there is enough strength to carry the sweetness without becoming heavy.

    Distilled in August 1996, when the Lochranza distillery was only a year old, the whisky spent a full 26 years in the same sherry cask before being bottled in July 2023, non-chill filtered and with natural colour. Only 258 bottles exist from this cask, and the entire batch is reserved for Denmark – a rare chance to taste what a quarter century on sherry oak does to Arran's bright, fruity house style.

This bottle marks FC Whisky's 20th anniversary, and with only 175 bottles from a single cask, it's a rare chance to taste Arran through one of Scotland's most discerning independent bottlers.

    Because the cask had already given up most of its initial power to an earlier fill, it draws more gently on the whisky this time — the result is a subtler, but still clear, sherry character layered over Arran's own fruit sweetness. Distilled in April 2006 and bottled in July 2024 after 18 years in wood, the whisky is bottled at cask strength, non-chill filtered and with natural colour. Only 244 bottles exist, all reserved for Denmark.

    Nose

    Sultana raisin, spiced cake and dark chocolate, tied together by a gentle sweetness from the cask.

    Auchentoshan is the only Scottish distillery that consistently distils everything three times. That gives a silky, elegant spirit which with age has developed a complex and refined character rather than turning heavy. Twenty-four years is a long time for that particular style.

    The whisky is bottled at cask strength without chill filtration and with natural colour. Auchentoshan sits at Dalmuir outside Glasgow and was founded in 1823.

    Nose

    Twenty-five years in a sherry cask is a long time, and the strength of 48.5% tells its own story: a fair amount has evaporated along the way, and what remains is concentrated. Signatory bottles at cask strength without adjustment, so the figure on the label is what the cask gave.

    Auchroisk was built in 1974 to supply malt for the J&B blend, and the distillery’s bright, citrus-driven style takes on an entirely different expression here. The sherry has had a quarter of a century to lay dark fruit and spice over the top.

    Tasting Notes

    Nose

    Dark and deep. Raisins, fig and orange marmalade first, then walnut, dark chocolate and a dry old oak note. A fine leathery note sits at the bottom.

    Twenty-eight years in a refill hogshead is a slow maturation. The cask does not give much colour, but it gives time, and it is the time that creates the soft, honeyed texture and the deep fruit found only in old whisky.

    The strength of 47.4% shows how much has evaporated along the way. Càrn Mòr is Morrison Scotch Whisky Distillers’ range of single casks, and Celebration of the Cask is the house’s line for the oldest and rarest casks in the warehouse.

    Balvenie 15 Single Barrel Cask No. 2423 is a Speyside Single Malt Scotch Whisky matured in one single oak cask and bottled at 50.4 %.

    The whisky went into cask on 23 February 1979 and was drawn on 14 July 1999 after fifteen years. The cask yielded 350 bottles, and the bottling is neither chill filtered nor colour adjusted. That combination was far from standard in the 1990s, when most distilleries still filtered and coloured as a matter of routine.

    Balvenie Single Barrel bottlings from this period are among the releases collectors look for. The cask cannot be recreated, the spirit comes from a production era with different yeast strains and different barley varieties, and the bottle has now sat for more than two decades since it was filled.

    Cask number 777. It looks like something made up for the occasion, but the number sat on the barrel long before anyone thought of selling the whisky as a single cask. Seventeen years later it went into litre bottles.

    Balvenie 15 Single Barrel Cask No. 777 is a Speyside Single Malt Scotch Whisky matured in one single oak cask and bottled at 50.4 % in litre format.

    The cask went into the warehouse on 3 February 1981 and was drawn on 9 April 1998. The outturn was 300 bottles, and the whisky is neither chill filtered nor coloured. The bottling falls in the period when Balvenie began giving its single casks a place of their own in the range.

    Seventeen years passed between filling and bottling, even though the label states fifteen years. The age statement refers to the guaranteed minimum age on the bottle, and the gap tells you the cask stood a little longer than it had to before anyone found it.

    Tasting notes

    Nose

    Honey, ripe pear and pale oak. A note of almond and dried flowers emerges after a couple of minutes in the glass.

    Palate

    Full and sweet with vanilla, honey and candied ginger. The oak is clear but soft, and the alcohol is carried well.

    Finish

    Long, warm and lightly spiced with a last touch of honey sweetness.

    Twenty-five years is a long time to hold your patience. The cask works slowly, a quarter of the contents disappears into the rafters along the way, and what is left has been allowed to find its own shape without anyone pushing it.

    Balvenie 25 years is a Single Speyside Malt Whisky matured in refill bourbon casks and sherry casks and bottled at 48 %.

    The bottling is the flagship of the house and was selected by David Stewart, who led the Balvenie malt master role for more than five decades. The whisky is drawn from a small number of casks that lay separately for twenty-five years and are only brought together shortly before bottling. Both American and European oak are represented.

    The 48 % is a deliberate choice. At that strength the whisky keeps its texture and its sherried core without the wood taking charge, which is often the risk with long maturation. After twenty-five years there is still fruit left, and that is rarer than it sounds.

    Tasting notes

    Nose

    Deep honey, dried fig and orange peel. Behind it sit old oak, dark chocolate and a note of pipe tobacco.

    Palate

    Dense and velvety with raisin, candied ginger and warm spiced oak. The sherry notes run deep without turning sticky, and the malt still holds its ground.

    Finish

    Very long with dark fruit, dry oak and a warm, spiced close that keeps going.

    Balvenie Founder's Reserve 10 years Old Version is a Single Highland Malt Scotch Whisky matured in bourbon casks and sherry casks and bottled at 43 % in litre format.

    Founder's Reserve was the Balvenie core bottling through the 1980s and 1990s, named after William Grant, who founded the distillery in 1892. It was phased out in the early 2000s when DoubleWood 12 took over as the entry bottle of the house, and it has not been in production since.

    This is the older version in the distinctive broad bottle that looks more like a cognac bottle than a whisky bottle. The label calls the whisky a Highland Malt, which was common practice at the time, when Speyside was often treated as part of the Highland region rather than as a designation of its own.

    Tasting notes

    Nose

    Honey, pale cereal and peeled apple. A soft sherry note sits behind it along with a hint of almond.

    Palate

    Round and malty with honeyed sweetness, vanilla and a lightly nutty middle. The sherry is discreet and pulls mainly towards raisin.

    Finish

    Medium, soft and dry at the end with malt and a touch of oak.

    Batch 001 is the pair of digits collectors look for first. Signature was the Balvenie attempt at showing what three cask types can do together, and the first batch is the one every later release has been measured against.

    Balvenie Signature 12 Batch 001 is a Single Speyside Malt Whisky matured in 1st fill bourbon casks, refill bourbon casks and sherry casks and bottled at 40 %.

    Signature launched in 2008 as a bottling built on three cask types rather than the usual two. David Stewart selected the casks by hand, and each batch carried its own number. Batch 001 is the first release in the series, which was phased out again a few years later.

    Each cask type plays its own part. First fill bourbon gives vanilla and coconut, the refill casks let the honey character of the spirit come through, and the sherry casks lay raisin and spice on top. Bottling at 40 % keeps the whole thing restrained and coherent.

    Nose

    Honey, vanilla and pale apple, with a note of coconut and a discreet sherry sweetness behind.

    Palate

    Soft and rounded with caramel, raisin and lightly spiced oak. The three cask types pull in different directions but are held together by the malt.

    Tun 1509 is not a cask but a vat. A large, old wooden tun standing in warehouse 24, where whisky from several barrels is left to sit together for months until the edges have worn off and the whole thing speaks with one voice.

    Balvenie Tun 1509 Batch 4 is a Single Speyside Malt Whisky matured in bourbon casks and sherry casks, married in Tun 1509 and bottled at 51.7 % without chill filtration.

    The series works by having David Stewart select a small number of casks, empty them into the large wooden tun known as Tun 1509 and let the contents stand and find each other over several months. Batch 4 is assembled from 23 casks, few enough that each individual cask can still be felt.

    Bottling happens without chill filtration and at high strength, so the oils and fatty acids filtration would otherwise strip out are allowed to stay. That gives a denser texture and a fuller mouthfeel than the standard bottlings of the distillery carry.

    Nose

    Honey, dried fruit and cinnamon. Behind it sit vanilla, ginger and a note of old oak.

    Palate

    Full and oily with malt, honey and warm spice. The high strength gives it an edge without turning sharp.

Distilled in December 2016 and bottled in December 2019, giving three years of maturation. Developed in two Portuguese STR wine casks, before finishing on a 1st fill Oloroso sherry cask that added winey sweetness, coconut and character. Only 227 bottles produced.

    Tasting notes

    Nose

    Intense sherry notes with dried fruit, coconut and vanilla pod. A rich winey depth from the Oloroso cask is clearly present, underscored by the roundness of the STR casks.

    Palate

    Full-bodied and mature for three years. The sherry cask sweetness settles with notes of dried fruit, warm caramel and coconut. A pleasant warmth at 53.8% carries it well.
