    Aged in American oak for almost ten years, finishing the last months in sherry casks. Master Distiller Noel Sweeney smells for the perfect balance, not drowning in the sherry flavor, but achieving an elegant finish.
    It doesn't get any better than that. The whiskey is bottled at 46% without being cold filtered. This means better preservation of the flavor nuances, but also that the whiskey can become cloudy when water is added.

    Tyrconnell, [dry - konnl] is distilled at Cooley distillery, Ireland's only malt distillery (there is also one in Northern Ireland). Cooley is the only Irish-owned (and independent) distillery in the whole of the Emerald Isle. Cooley was founded in 1987 and named after the local Cooley hills, located just over 90 kilometers north of Dublin. The first malt whiskey was distilled in 1989, and the following year production was expanded to include grain whiskey. This made it possible to create their own blended whiskeys.

    But why is the malt whiskey called Tyrconnell? The label provides part of the answer. On the label and gift tube is a picture of a racehorse. Tyrconnell was the name of a horse that in 1876 won the Irish Derby in the racing-loving country. Gambling and whiskey were borderline permissible in the Catholic country, which is why both have such a high status today. The horse Tyrconnell was owned by the Watt family, who understandably named a whiskey after it. The odds of it winning the Derby were 100 to 1. Watt's distillery was founded in 1762, but had to close in 1925. The whiskey was resurrected when Cooley's boilers finally started distilling.

    Whiskey from the distillery is shipped through Ireland to the old John Locke's distillery in Kilbeggan, where it is aged in 250-year-old warehouses. The majority is aged in American oak casks, while a small amount finds its way into sherry, madeira and port wine casks. Tyrconnell is double distilled and thus has a full-bodied flavor, with a typical Irish softness and sweetness. Unfortunately, the special bottlings are highly sought after, so it can take many months before bottles are available in the country.
