Starward FORTIS American Oak Red Wine Matured Single Malt Australian Whisky is matured in American oak casks that previously held red wine, bottled at a high strength of 50%. Starward was founded in 2007 by David Vitale, who set out to create an unmistakably Australian whisky and rejected the notion that great whisky could only come from Scotland, Ireland or Japan. The distillery's hallmark is that the whisky is matured exclusively in Australian wine casks rather than the traditional ex-bourbon or sherry casks, establishing an entirely new style within world whisky. In 2016 the distillery moved to a purpose-built site in Port Melbourne.
