    Starward SOLERA Apera Wine Matured Single Malt Australian Whisky is matured in Australian Apera casks (the Australian term for sherry-style wine) using a solera-inspired system, bottled at 43%. Starward was founded in 2007 by David Vitale, who set out to create an unmistakably Australian whisky and rejected the notion that great whisky could only come from Scotland, Ireland or Japan. The distillery's hallmark is that the whisky is matured exclusively in Australian wine casks rather than the traditional ex-bourbon or sherry casks, establishing an entirely new style within world whisky. In 2016 the distillery moved to a purpose-built site in Port Melbourne.
