In the hills around San Dionisio Ocotepec, agave hearts are still roasted in earthen pits the way they have been for generations. From that process rises Topanito's first mezcal - raw, pure and true to the craft.
Expert Description
Topanito Mezcal Espadín Blanco is a 100% Espadín Mexican Mezcal Artesanal bottled at 40%.
The mezcal is created by the German spirits house Perola, which founded Topanito in 2011 to make authentic, handcrafted mezcal and tequila accessible to a wider audience. Production takes place with the mezcaleros at the Amantes de lo Ajeno distillery in San Dionisio Ocotepec, Oaxaca, where Espadín agaves of at least seven years of age are hand-harvested and their hearts roasted in coal-filled earthen pits for several days. They are then crushed on a traditional stone mill called a tahona, before fermenting and being double distilled in copper alembic stills.
