Nyborg Destilleri was established in 2017, but the dream and production of råsprit started back in 2009 at Ørbæk Bryggeri, where Niels Rømer and his son Nicolai produced organic products, including specialty beers and soft drinks, aquavit, etc. With the help of Allan Poulsen, they distilled råsprit and put it in a used bourbon cask, which was bottled on June 15, 2012, and thus the first edition of Isle of Fionia was born, with 362 bottles, bottled at 58% in an exclusive wooden box including two Glencairn glasses with logo.
