Margarita Sorbet with Jalisco Tequila, serves 4. Featuring San Jose Silver Tequila
200 g. cane sugar,
4 limes,
¾ l. water,
8 cl. Tequila San José Silver,
2 tbsp. Marie Brizard triple sec,
a pinch of salt for the rim.

• Pour sugar into a saucepan and zest the limes into it. Shake it together and let it rest for an hour. Pour in the water and slowly heat it to just below boiling point, letting it simmer gently while stirring for five minutes.
• Strain this syrup through a sieve and let it cool to room temperature. Then stir in lime juice, tequila, and triple sec, pour it into a plastic container with a lid, and place it in the freezer. Take the container out occasionally and stir the mixture with a fork. If you have an ice cream maker, it will do the job for you.
• In any case, let the finished sorbet rest in the freezer overnight. Serve in individual glasses with salt on the moistened rim and a fresh lemon wedge.
 

PS: I made a small well in the sorbet and poured a bit of Tequila San José Silver into it. This didn't make my sorbet any less festive.

 

About San José Tequila:
"Very recognizable by its sweetness and fruity notes, SAN JOSÉ Tequila is made in the Jalisco province, in Mexico, following a traditional process that gives this tequila its distinctive tasting notes."

Tequila has, here in Denmark, lived a somewhat withdrawn existence in recent years. Although we have all encountered it, if not as anything else, then as a young party animal, few of us know much about this Mexican spirit, except that it is supposedly made from a type of cactus called agave. Apart from sharing a habitat with them, agave has nothing to do with a cactus but belongs to its very own species.

The blue agave from Jalisco has long narrow leaves, and when you cut them off, there is a large sugary bulb left, resembling a pineapple. This bulb is baked, chopped into pieces, fermented for 48 hours, and the distillate from this process becomes tequila. That's the short version. Depending on post-processing and aging, you end up with one of the five main types, each with its characteristics, color, flavor, and strength.

In the USA, tequila is experiencing a true boom with a sales increase of almost 32% in 2021. There is much more focus on developing nuances and subtlety among producers, and it seems to be something the growing market appreciates.

Tequila San José Silver has a fine and strong expression in taste with fruity notes and a pleasant sweetness, balanced by tangy citrus. Finally, it settles softly in the mouth, still with a gentle sweetness lingering in the aftertaste.



About the cookbook: Mad med promiller
Over the spring, the two owners of the largest liquor store in the Nordic region, Ulrik Bertelsen and Henrik Olsen, have been working to realize a long-standing dream.
