For the last glass, we move east to Barbados and the famous Foursquare distillery. However, this is something as unusual as a 19-year-old gammel rom, which has been aged its entire life in the continental climate. Therefore, despite its age, the rum appears somewhat lighter than most other Foursquare bottlings you've probably seen and tasted. Typically, Foursquare makes blends of both pot still and column distilled rums, but this bottling should be pure pot still, bottled at 50.7% alcohol.


Aroma: Oak, heather and tobacco are what lingers in my nostrils after they've been in the glass. Quite far from the classic Foursquare profile.

Taste: The rum feels light in the mouth, and to me it tastes mostly of ground pepper, oak and leather, while English licorice and tobacco dominate the aftertaste. On tasting, I can detect a hint of vanilla and coconut, which I would have expected from Foursquare. But in a blind tasting, I would have guessed that this glass came from the Savalle pot still at Diamond Distillers in Guyana. It's a funny example of how much climate matters in the development of rum.
