Starward Whisky from Australia

There's no doubt that Starward is currently driving the Australian whisky revolution. The distillery was founded in 2009 by David Vitale with the ambition to make Australian whisky as famous as Australian wine. In fact, wine plays an important role at Starward: one of their hallmarks is the use of Shiraz, Cabernet Sauvignon, Pinot Noir or Apela wines from the Barossa Valley and other famous wine regions just a few hours' drive from the winery.

Starward The barrels come from the wineries fresh - typically just after they've been emptied. In fact, all the ingredients for the whisky are sourced within a day's drive from the distillery, which is located in Melbourne.

Whisky production in Australia may have only started in the 18th century, but in the last few decades, it has gained the attention of the international whisky community. Australia is a large country, so the climate, water sources and raw materials vary greatly, which is also reflected in the different whisky brands.

Starward is not an outback whisky, it's a Melbourne product through and through, and they take particular pride in the city's food culture and gastronomic curiosity, leaving the philosophy of distillers and master blenders behind when creating new whiskies on the Starward imprint. In addition, Melbourne's variable climate, with large temperature fluctuations throughout the day, is one of the secrets behind the rapid maturity of whisky, meaning that whisky often takes just 3 years to fully mature. The locals call it "four seasons in one day".
