    Uncompromising buyer with quality as his only interest. Michel Courveur's working methods are unique. He is the type to go the extra mile.
    Couvreur imports sherry for his Domaine in Beaune, France. He bottles the sherry and fills the imported sherry Whisky into the fresh casks on the same day. This is called "Fresh Filling" and Michel Couvreur is today the only one practicing this method. Fresh Filling is the equivalent of turbo-charging the barrel aging process, and this is clearly evident in Couvreurs Whisky, where the style can be described as surprisingly full-bodied and rounded, with an incredibly broad palette of flavors.

    Any connection?

    Yes, absolutely - the connection is Michel Couvreur. Couvreur began in 1951 (!) as a retailer of the finest wines from Burgundy, but from 1978 onwards, he turned his perfectionist mind to whisky and today he is a living legend in the world of whisky. Burgundy still plays a role, however, as the young whiskies Couvreur buys in Scotland (carefully selected, of course) are all finished in deep cellars in the village of Bouze-les-Beaune, where Couvreur himself lives. It may sound strange that Michel Couvreur insists on running his business in Burgundy when whiskies are the nerve center of his business.

    This is because he swears by 'fresh filling' when his whiskies are aged in Spanish sherry casks - the classic use of sherry casks when making whiskies. The sherry must first be emptied from the casks just before they are filled with whisky. Today, no one but Couvreur practises this practice, as it is expensive and laborious. But Couvreur himself says
    that "fresh filling" gives a whisky of 4-5 years old character like a 30 year old whisky that has been aged in used barrels. Therefore, he Michel Couvreur finds his own casks in Jerez and, with the help of Emilio Lustau, gains access to exceptional casks at Alamacenistas, after which they are shipped - with sherry - to Burgundy.

    Here they become the indispensable component in Couyvreur's fine polishing of the young whiskies. The small Burgundy town of Bouzeles-Beaune is ideally located exactly halfway between Jerez and the Scottish Highlands.
