MADKLUBBEN RHUBARBOMB Cocktail with Bathtub Gin

Madklubben is quite well-established on the Danish restaurant scene, where everywhere they guarantee a good meal according to different concepts. Of course, they also serve something delicious by the glass in their restaurants and bars. Here, the restaurant in Vesterbro has combined the gin from Bathtub with the summer favorite, rhubarb.

Ingredients

• 4 cl Bathtub Gin
• 5 cl homemade rhubarb syrup* (The alternative is MODO Rhubarb syrup)
• 3 cl lemon juice (freshly squeezed of course, with a lemon squeezer)
• 4 dashes rhubarb bitters
• 2 dashes peychaud bitters
• 1 slice of lime topped with pomegranate for garnish

How to make it

Shake all ingredients - except the lime slice and pomegranate - with ice.
Strain over ice into a lowball glass.
Garnish with lime and pomegranate.

*To make the rhubarb syrup, simmer half a kilo of rhubarb in 1 dl of water for about 15 minutes. Feel free to stir a few times along the way. After about 15 minutes, the rhubarb will have released all its juice, place it all in a fine-mesh sieve and strain the juice into a small saucepan. Add 250 g of sugar to the liquid and cook over low heat for 15-30 minutes until the liquid has turned into a slightly thick syrup. This makes about 1.5 dl of syrup that will keep for up to 6 weeks in the fridge, if you can keep it that long. By the way, the syrup will not be any worse if you add a split vanilla pod when you boil the rhubarb.

About Bathtub Gin:

Bathtub Gin originated as a concept during the American Prohibition era, when amateurs made "gin" in their bathtubs. They did this by adding flavorings to alcohol of questionable character - for example, in their bathtubs.
Although the gin from Bathtub is of a much higher grade than that made during Prohibition, there are similarities. For example,
the regular gin is also produced by infusion, as was done in Prohibition-era USA.
