Instructions:
1. Prepare the dough:
- Dissolve the yeast in the lukewarm milk.
- Add sugar, melted butter, and the egg, and mix everything together until smooth.
- Gradually add the flour and salt, and knead the dough until it is soft and elastic for 5-10 minutes.
- Let the dough rise covered in a warm spot for about 45 minutes, until it has doubled in size.
2. Prepare the topping:
- Melt the butter in a pot and then stir in the brown sugar, syrup, and A Christmas Spirit. Let it melt together into a thick, smooth caramel mixture.
3. Assemble the brunsviger:
- Roll out the dough on a greased baking tray until it is about 1-1.5 cm thick.
- Make small indentations in the dough with your fingers and evenly spread the sugar mixture over the dough so it seeps into the indentations.
4. Baking:
- Preheat the oven to 200°C.
- Bake the brunsviger for 15-20 minutes, or until golden at the edges and bubbling on top.
5. Serving:
- Let it cool slightly, and then serve it warm so the topping melts in your mouth with each bite.

The Story Behind Danish Brunsviger and Brunsviger Day
Brunsviger is a beloved Danish cake, especially associated with the island of Fyn. This sugary, sticky delicacy is known for its soft yeast dough base topped with a generous layer of melted brown sugar and butter, creating an irresistible caramel-like crust. The origins of brunsviger can be traced back to the Danish tradition of simple, comforting baked goods that were affordable and made with readily available ingredients. For centuries, brunsviger has been a part of Danish food culture, often served at birthdays, school parties, and other celebrations—particularly in Fyn, where it holds special cultural significance.
