Celler La Muntanya Vermouth Saüc Blanc is a Spanish white vermouth made from the white Malvasía grape, bottled at 15% ABV. The vermouth comes from the small winery Celler La Muntanya in Muro d'Alcoy in the province of Alicante, founded in 2004 with the aim of reviving old, abandoned vineyards around the Sierra Mariola mountains.
The winery runs the Microviña project, seeking out and bringing small, forgotten vineyards and native grape varieties back into production. The Saüc vermouth follows a recipe dating back to 1890, and more than 40 wild botanicals from the Sierra Mariola mountains are added to the base wine - including elder, called saüc in Catalan and Valencian, which lends its name to the whole vermouth series. The elder is grown in the winery's own courtyard.
