Organic and CO2 neutral Malt Whisky from the West Coast of Scotland

In just a few years, Annabel Thomas has done what is expected of the Scotch whisky industry over the next twenty years. She has created a sustainable distillery where the spirit is organic and where more CO2 is taken out of the air than is put in. At the same time, the whisky is damn good, so expectations for future bottlings are very high. Follow and taste along, it's going to be an exciting journey.

A whisky produced by nature
Nc'nean Distillery is a small, independent and organic whisky distillery with the ambition to create experimental spirits while pioneering sustainable spirit production.

Independent of tradition
Annabel Thomas established Nc'nean Distillery to change people's perception of Scotch whisky. Her mission has been to create a whisky that can be produced in harmony with the planet we call home. After leaving her job at London in 2013, she spent four years raising funding and building the distillery from scratch on the west coast of Scotland.

Nc'nean has been distilling since 2017.
Pioneer in sustainable spirits production Sustainability is part of the distillery's DNA, and its stance
is clear and firm. Annabel Thomas firmly believes it is the distillery's responsibility to constantly improve
its impact on this earth in terms of carbon footprint, pollution and biodiversity. That's why organic Scottish barley is used in production, powered by renewable energy and 99.97% of the distillery's waste is recycled. When the whisky is bottled, it is bottled in 100% recycled glass bottles.

Experimental by nature
A philosophy, a way of seeing the world, a curiosity and a willingness to try. From this approach, the first products were born. Simply asking the questions "why" or "what if" was the start of the distillery's fermentation experiments. Most distilleries in Scotland use the same yeast because it gives the highest alcohol yield. But what happens to the taste if you use different yeasts? Well, we'll soon find out, as Nc'nean is experimenting with yeast types.

Nc'nean goes its own way
The inspiration for the distillery's name is "Neachneohain" who was an ancient Gaelic goddess. She was known as the "Queen of Spirits" and a fierce protector of nature. She was strong and independent and never afraid to go her own way. Annabel Thomas tries to follow her ethos in everything she and her team do.

The distillery itself
Nc'nean is equipped with a one-ton mash tun and four stainless steel washbacks. Fermentation takes place over a period of 65 - 115 hours. There is only one boiler set consisting of a 5,000 liter wash still and a 3,500 liter spirit still. The distillery's warehouses now house more than 2,000 sherry casks, bourbon casks and vinfade
