Couvreur imports sherry to his Domaine in Beaune, France. He bottles the sherry and fills the imported sherry Whisky into the fresh casks on the same day. This is called "Fresh Filling" and Michel Couvreur is today the only one practicing this method. Fresh Filling is equivalent to turbo-charging the barrel aging, and this is clearly evident in Couvreurs Whisky, where the style can be described as surprisingly full-bodied and rounded, with an incredibly broad flavor palette
