    Elegant dry sherry wine made from Pedro Ximénez grapes. The wine has a golden color and the first impression is of balsamic, nuts and spices. The winery Bodegas Toro Albalá is located in Aguilar de la Frontera, 50 km south of Córdoba, and was established in 1844 by Antonio Sánchez Prieto in a mill close to the town's castle. In 1922, José M. Toro Albalá moved production to the town's former power plant. The power plant offers ideal conditions for wine storage with plenty of cellars and underground rooms and corridors. The winery's average production is around 300,000 bottles per year. The cellars hold up to 6000 barrels of wine of all ages. In recent years, the bodega has achieved near cult status with the release of up to 100-year-old wines from the cellar.

    Williams & Humbert is a historic sherry house that for generations has refined the art of producing sherry in the classic Jerez style. This traditional approach gives their wines a distinctive balance, depth and elegance, all of which are clearly expressed in Dry Sack – one of the bodega’s most renowned and historically significant releases. Dry Sack is made from a blend of Palomino and Pedro Ximénez grapes, where Palomino contributes structure and dryness, while PX adds sweetness and richness. After blending, the wine is matured in the traditional Criaderas y Soleras system, where younger and older wines are gradually combined to achieve a consistent and complex profile. The maturation takes place oxidatively for at least 15 years, resulting in a sherry with great depth, warmth and a gently sweet Oloroso character. The sugar level is around 82 g/l, giving roundness without overshadowing the wine’s natural freshness. Dry Sack is often mentioned as the first sherry ever to receive an official age designation, giving it a special place in the history of Jerez.

    The aroma is intense and marked by dried nuts, especially walnut and hazelnut, accompanied by subtle oxidative notes. The palate is full‑bodied and well‑balanced with a fine acidity that lifts the sweetness and allows room for nuances of nuts, caramel and dried fruit. The finish is long and pleasant, with warm nutty tones lingering softly.

    Dry Sack can be enjoyed on its own or with a few ice cubes. It is an excellent aperitif but also works surprisingly well as a food pairing, especially with pasta dishes, tapas, mature cheeses or dishes featuring mushrooms and nuts. It is a sherry that appeals to both newcomers and seasoned sherry lovers, and it clearly demonstrates why Williams & Humbert remains one of the most respected producers in Jerez.

This 20‑year Solera Especial is made exclusively from Pedro Ximénez grapes, which are sun‑dried after harvest to intensify their natural sugars and create the characteristic, almost syrup‑like sweetness for which PX sherry is famous. The result is a dark, dense and irresistibly rich sherry with a complexity that can only be achieved through decades of slow maturation.

    Don Guido is aged in Williams & Humbert’s historic solera system, where the wine undergoes long oxidative development that enhances the depth of the dried grapes and builds an intense aromatic and flavour profile. Its deep mahogany colour immediately signals a sherry of exceptional concentration and elegance.

    The aroma is rich and seductive, offering notes of raisins, figs, dates, molasses, caramel and dark chocolate. Subtle hints of coffee, liquorice and nuts reveal the influence of long ageing. The palate is silky, deeply sweet and almost creamy in texture. Layers of dried fruit, syrup, burnt sugar and cocoa unfold gradually, while a gentle acidity keeps the sweetness balanced and prevents it from becoming heavy. The finish is extremely long, warm and persistent – an intense aftertaste that lingers long after the final sip.
