Salvadoran Party Banana with Ron Colón Red Banana Rum, 4 people

1 can of dulce de leche. Buy it ready-made or make it yourself,
2.5 dl whipping cream,
8 digestive biscuits,
4 bananas,
50 g. butter,
1 dl. freshly squeezed orange juice,
1 tbsp. cane sugar,
4 cl. Ron Colón Salvadoreño Red Banana Oleo Rum.

- Peel and slice the bananas.
- Melt the sugar in a pan and add the butter as soon as the sugar turns golden.
- Pour the orange juice into the pan, stir, add the bananas and simmer for five minutes. Pour in the rum, flambé and leave to cool for 15 minutes.
- Crush the biscuits in a freezer bag, preferably a little coarse.
- Whip the cream until frothy and set aside.
- All that's left to do is arrange in four serving glasses. Start with some crushed biscuits at the bottom, then some bananas, some dulce de leche and finally whipped cream. Repeat this, pour over the liquid from the pan and garnish the top with the last of the whipped cream and dulce de leche and some chopped chocolate.

It all started in 2018 when two good friends from California, Thurman Wise and Pepijn Janssens went on a 22-day bar cruise to Central America, ended up in El Salvador and fell in love with what they saw and experienced. They were both already working in the industry at the time and when they were excited by the quality of the country's two most recognized commodities, they immediately thought, we must make a rum with coffee. They did and it was a huge success. Enthusiastically, they have since embarked on other visionary experiments and the latest addition is a seductive rum with banana.

In El Salvador, a banana is not just a banana, they exist and are grown in a multitude of varieties and one of them is called banana rojo, a little red cousin full of vitamins and antioxidants that is also planted on coffee plantations to provide shade for the beans. Since Ron Colon had been successfully playing with drink combinations on their classic dark rum and an oleo saccharum made with banana rojo, they found it natural to go all out and create a finished rum based on these themes.

First of all, don't be fooled by the purple colored bottle, I think it was chosen to stand out on the bar shelves. A little too Ibiza for my taste, but whatever. The contents are a beautiful amber gold with good viscosity and the nose is immediately hit by a captivating and sweet tropical aroma with fresh sugar cane and banana in the foreground. The taste is super-rich on banana and caramel, giving you a hint of coffee and sweet berries as well as a little funk from the traditional pot-still in the background. The finish is pleasantly long, sweet and distinct.

About the cookbook: Mad med promiller
Over the spring, the two owners of the Nordic region's largest liquor store, Ulrik Bertelsen and Henrik Olsen, have been working to realize a long-standing dream. With the help of a good friend of the house, Jan Ohrt, the book Mad med Promiller #1 is now a reality and it was presented on Saturday, August 5, 2023 at an informal premiere in the more than 400m2 store at Vejstruprødvej 15 in Sjølund.

The project has been created with the benevolent support of some of the store's suppliers and the idea is that it is given free of charge to customers every time they buy a bottle that is represented in the book.
