Gin & Tonic Cheesecake - Dessert recipe from Mad med promiller - Fary Lochan Gin - by Jan Ohrt

Gin & Tonic Cheesecake, 8 pers. with Fary Lochan Citrus Gin

Base:
200 g butter, 300 g crumbled digestive biscuits.
- Melt the butter in a saucepan, add the crumbled biscuits and mix well.
- Press the biscuit mixture together in a round springform pan, Ø22cm. and refrigerate

Cream:
8 leaves of gelatine,
4 pasteurized egg yolks,
100 g sugar,
400 g natural cream cheese,
2 dl creme fraiche 18% or 38%,
seeds of 1 vanilla pod,
2 tsp. organic grated orange peel,
2 dl Fary Lochan Gin Citrus,
2 dl whipping cream.
- Soak the gelatine in cold water for 10 min. Whisk the egg yolks with the sugar. Mix the cream cheese, crème fraîche, vanilla, orange zest and gin together and then stir in the egg mixture.
- Melt the gelatine in a small water bath and mix it with some of your fromage and fold it into the rest.
- Whip the cream to a soft foam and fold it into the fromage.
- Now spread it in an even layer over the biscuit base and cover and refrigerate for six hours.

Pink tonic jelly:
5 leaves of gelatine, 5 dl pink tonic or regular colored with a little grenadine, 100 g sugar.
- Soak the gelatine for 10 minutes in cold water. - Cook the tonic in cold water. in cold water.
- Boil the tonic down to 3 dl. Add the sugar and boil until the sugar has dissolved. Remove the pan.
- Remove the gelatine and squeeze out the water. Add the gelatine to the tonic mixture and stir until dissolved. Allow your jelly to cool until cold and spread over the cake. Cover and refrigerate the cake again for four hours.

Garnish with thin slices of lime and edible flowers

Fary Lochan makes an excellent Classic Gin, mild and soft with notes of citrus and cucumber that can only evoke good summer memories. With this as a base, their Fary Lochan Gin Citrus was born, which turned out to be an extremely pleasant acquaintance, with a little extra citrus and lime added to good effect. The color is delicately golden and everything is balanced perfectly and it can easily be enjoyed as it is or, for example, with a neutral tonic, ice cubes, cucumber strips and a little Szechuan pepper. Or you can use it in your cheesecake

About the cookbook: Mad med promiller
During the spring, the two owners of the Nordic region's largest liquor store, Ulrik Bertelsen and Henrik Olsen, have been working to realize a long-standing dream. With the help of a good friend of the house, Jan Ohrt, the book Mad med Promiller #1 is now a reality and it was presented on Saturday, August 5, 2023 at an informal premiere in the more than 400m2 store at Vejstruprødvej 15 in Sjølund.

The project has been created with the benevolent support of some of the store's suppliers and the idea is that it is given free of charge to customers every time they buy a bottle that is represented in the book.
