When whisky distilleries refer to the natural evaporation from cask aging as "Angel's Share", Caribbean rum producers call this phenomenon "Duppy Share". The name comes from the islands' diverse folklore, which in this case refers to rum-loving spirits and ghosts called duppies who travel between the islands and steal a little rum from whatever casks they can find. No natural evaporation here.


Duppy Share is a London based company that has had great success blending rums from Barbados and Jamaica. Duppy Share Spiced is composed of three years gammel rom from Worthy Park Estate and five years gammel rom from Foursquare Distillery, after which they have been carefully infused with pineapple, kola nut, a little nutmeg and other of the archipelago's diverse herbs.

As a dram, it's not bad at all, even if you're not a big fan of rum with all sorts of natural flavors added. The notes of pineapple and nutmeg (I couldn't quite find the kola nut) are pleasantly subdued and give a long fruity and spicy aftertaste that lingers well and long in the mouth and palate. But since I was going to drink it with a small handful of Caribbean hot wings, I chose to mix it with white grape and apricot from Fever-Tree plus a little lemon zest. We can call it Spiced Spritz:

5 cl. The Duppy Share Spiced
1 bottle of white grape and apricot from Fever-Tree
A handful of ice cubes
A few slices of lemon peel

This blend proved wonderfully harmonious without killing the original notes of the rum and a beautiful accompaniment to my lunch.

Buy a couple of kilos of chicken wings of reasonable quality and make your own marinade from the following.

Homemade Hotwings with Duppy Shared Spiced Rum:
2 cl Duppy Shared Spiced Rum
4 cloves finely chopped garlic
1 regular onion finely chopped
1 tbsp. grated ginger
1 jalapeno medium strength finely chopped and seedless
1 tbsp. good soy sauce
2 tbsp. honey
Juice from 3 limes
1 cup orange juice
2 tsp. salt
2 tsp. freshly ground pepper
2 tsp. smoked paprika
2 tsp. dried thyme
1/2 tsp. ground nutmeg
1/2 tsp. ground cardamom
1/2 tsp. cayenne pepper
½ cup olive oil

Mix everything in a large freezer bag, add the wings and tie the bag in a knot. Leave in the fridge for at least two hours, preferably overnight. Remove the wings, discard the marinade and grill for 30-40 minutes, turning every 10 minutes until the skin is evenly crispy. I like to sprinkle with a few sesame seeds along the way. The quantity may seem excessive, but the fried wings can easily be frozen and reheated.
