- Peel and chop the large onion and 2 cloves of garlic and fry over a low heat in a large frying pan in a little duck fat. Rinse and halve the Christmas lettuce and place it in the pan next to the onions. Turn them over after a few minutes and fry for a few more minutes. Pour in the port wine, reduce the heat, cover and simmer for about 10 minutes.
- Remove everything from the oven, scrape the flesh from the pumpkin and blend it with a little apple vinegar and the baked garlic. Season to taste with salt and pepper. Slice the duck breasts.
- Arrange the salad on warmed plates, then the duck breasts and pumpkin puree. Bring the sauce to a simmer and stir in a good knob of butter before pouring it over your dish. Garnish with fresh thyme and blackberries.
