Duck breast in port wine sauce with hokkaido and Christmas salad, 4 people - Noval Black Port

2 large Berberi duck breasts,
1 hokkaido pumpkin,
6 cloves of garlic,
1 tbsp. olive oil,
1 tbsp. apple vinegar,
1 large onion,
2 Christmas lettuce,
2 tbsp. butter,
3 dl Noval Black Reserve port wine,
salt and pepper and some fresh thyme and blackberries for flavor and garnish.

- Wash the pumpkin thoroughly and cut it into wedges. Scrape out the seeds with a spoon and bake for 40 min. at 160 degrees hot air brushed with olive oil and 4 cloves of garlic.
- Score the duck breasts on the skin side and rub them with salt and pepper. Place them in a dry pan, skin side down, and fry until crispy. Turn them over and finish cooking for 10 minutes on a low heat. Place them in the oven with the pumpkin and let them finish baking there.
- Peel and chop the large onion and 2 cloves of garlic and fry over a low heat in a large frying pan in a little duck fat. Rinse and halve the Christmas lettuce and place it in the pan next to the onions. Turn them over after a few minutes and fry for a few more minutes. Pour in the port wine, reduce the heat, cover and simmer for about 10 minutes.
- Remove everything from the oven, scrape the flesh from the pumpkin and blend it with a little apple vinegar and the baked garlic. Season to taste with salt and pepper. Slice the duck breasts.
- Arrange the salad on warmed plates, then the duck breasts and pumpkin puree. Bring the sauce to a simmer and stir in a good knob of butter before pouring it over your dish. Garnish with fresh thyme and blackberries.

Over the spring, the two owners of the Nordic region's largest liquor store, Ulrik Bertelsen and Henrik Olsen, have been working to realize a long-standing dream. With the help of a good friend of the house, Jan Ohrt, the book Mad med Promiller #1 is now a reality and it was presented on Saturday, August 5, 2023 at an informal premiere in the more than 400m2 store at Vejstruprødvej 15 in Sjølund.
