Cranachan - Scottish Apple Cake - By Stewart Buchanan Global Brand Ambassador for BenRiach

Stewart Buchanan Global Brand Ambassador for BenRiach, has made a delicious opskrift on cranachan. A Scottish apple cake with BenRiach Original 10.

 

Now you have the opportunity to make your very own cranachan, a Scottish apple cake with whisky. This opskrift is made with Benriach Original 10.
Remember that the apple filling needs to be made 24 hours in advance.


Apple porridge for apple cake
Melt the butter in a saucepan until light brown. Add water, sugar and cinnamon and mix well. Add BenRiach Original 10 and apples. The apple porridge should simmer for 5-7 minutes until the apples are cooked through - stir the porridge as you go. Adjust the consistency with cornstarch if needed. Place the porridge in the fridge.

Whipped cream with oats
Whip the cream until it is fluffy and delicious. When the cream is stiff, add the whiskey, honey, vanilla and toasted oats.

To serve
Pour the cooled apple porridge into a glass, then add the whipped cream and repeat until you reach the top.
Sprinkle crumbled caramel pieces on top and finish by garnishing with a thin slice of apple and some mint on top.

Apple porridge for apple cake

  • 4 apples, peeled and diced
  • 20 g butter
  • 30 g sugar
  • 30 ml water
  • 30 ml of water BenRiach Original 10
  • 2 tsp cinnamon
  • Possibly the juice from one helve lemon

Whipped cream

  • 570 ml cream
  • 100 g toasted oatmeal
  • 80 ml BenRiach Original 10
  • 3 tsp honey
  • A dash of vanilla

Garnish

  • Caramel pieces
  • Thin slices of fresh apple
  • Fresh mint
