    Masterclass Scientific Lectures with Dr. Claus Rosensparre – IMPORTANT: Requires a purchased entry ticket to the Whisky Fair

    Join Dr. Claus Rosensparre for an engaging lecture on Whisky – through the eyes of a fermentation scientist. The lecture is conducted in either Danish or English, depending on participant preference, and takes place in a Skybox on the 2nd floor of Sydbank Arena. With only 10 tickets available, seats are allocated on a first-come, first-served basis.

    This unique event is designed to teach the science behind whisky production.

    Using mathematics, biology, and chemistry, Dr. Rosensparre will explain how different flavor profiles emerge. Highlights include:

    • Demonstrating the isolation of whisky yeast strains from flower surfaces and characterizing them for aroma and taste
    • Insights into the yeast's production of fruit esters during fermentation and how they influence the final product
    • Exploring the impact of various wood types in the maturation process
    • Mathematical calculations and methods essential for a distiller’s everyday work
    • Testing enzyme activity in malt and using measurement tools for whisky mash and alcohol during distillation

    Each session lasts approximately three hours and includes tastings of:

    • Five different base types used for maturation: bourbon, brandy, rum, honey nectar, and cognac
    • Six New Makes crafted with yeast from nature, showcasing differences between Saccharomyces, Brettanomyces, and spontaneous wild fermentation – rare flavor experiences seldom found on the market

    All samples are created using carefully isolated natural yeasts. These whiskies are produced in limited quantities and are exclusively available during this lecture. There is no commercial sale or distribution.
