The whisky is a blend of single malt consisting of Ardbeg, Caol Ila, Bowmore and Port Ellen which together make a formidable and worthy partner for Christmas schnapps accompanied by herring of all kinds. I have tasted Big Peat together with a spegesild, which is my favorite on the Christmas buffet. Here they complement each other. Big Peat The herring gives the herring smoke and sea salt, while the fish gives the whiskey fatness and room to stand out. I experienced the fattiness of the herring as a membrane around the entire mouth. Big Peat could contribute something that absolutely fascinated me. When the dram hit my biological senses inside my mouth, the fat layer from the herring removed itself like an explosion and I could really taste different spices, vanilla and a hint of oily sea. The color of the whisky is more light/golden and the smell is reminiscent of the soot you find on the inside of the glass on the stove.
