SALL WHISKY DISTILLERY RELEASES FIRST BATCH OF ORGANIC NEW MAKE AT WHISKY FAIR

Sall Whisky Distillery began as an idea conceived in a construction trailer amidst biting frost during an archaeological excavation in the Jutland soil several years ago. The seven young founders have since found great success with a crowdfunding campaign and, with strong support from the local community in Sall, they have realized a new organic whisky distillery in East Jutland. Here, the seven young men produce whisky exclusively with organic grain from Lars’ fields, who is one of the owners and an organic farmer. Since the beginning, their dream has been to sow, cultivate, and harvest the crops to create a hyperlocal, organic whisky where they can even include the field names on their bottles.

After a few intense years of financing, self-building, and installing and commissioning the distillery’s equipment, the guys from Sall now have a finished first batch, which was casked in 2019.

GLØD 3.1 is a Single Malt & Single Farm Whisky created with deep respect for the origin of the ingredients and the traditions of craftsmanship. The grain used for this whisky is carefully selected and grown on Lars' own fields, Kvolbæk and Stadsgaard. This ensures a strong connection between the soil, the farmer, and the distillate, providing a unique opportunity for full traceability from the individual bottling to the specific field where the grain was sown and harvested. The grain for this batch was harvested in 2020, with Evergreen grain as the raw material and Pale malt as the fine malt used.

After harvesting, the grain was carefully processed with an open mashing process, where fermentation lasted for a full seven days. This slow and controlled process results in a richer and more complex flavor profile before the whisky was distilled twice in traditional copper pot stills. This method is known for creating a pure and intense whisky, allowing the grain’s flavor nuances to shine through.

The whisky was then matured in carefully selected casks. Two ex-Oloroso sherry casks and one ex-bourbon quarter cask added depth and complexity to the whisky. The sherry casks contribute warmth, dried fruit notes, and a subtle spiced sweetness, while the bourbon cask brings vanilla, caramel, and a delicate spicy finish to the palate. This combination of casks creates a harmonious balance, making GLØD 3.1 a whisky with both richness and finesse.

GLØD 3.1 is bottled at 51.2% ABV, giving the whisky a distinct character and a powerful flavor experience. Batch 3.1 consists of only 534 bottles, making this whisky a rare and exclusive delight for whisky lovers.

With GLØD 3.1, you get a unique Single Malt Whisky that celebrates Danish agriculture, craftsmanship traditions, and the journey of grain from field to bottle.
