With four percentage points more alcohol than the smaller bottle, the spice steps forward more clearly while the sweetness keeps the flavour mild and friendly throughout.

    Faer Isles Distillery North Atlantic Akvavit Ocean Truffle is an akvavit from the Faroe Islands bottled at 43.4% ABV.

    The bottle comes from Faer Isles Distillery in Vestmanna, a small distillery in the middle of the North Atlantic founded in 2021 by, among others, Bogi Mouritsen and Dánial Hoydal. The distillery's philosophy is simple: whatever can be sourced locally on the islands should end up in the bottle, and this akvavit is no exception.

    The defining botanical is Ocean Truffle, the Faroese name for the seaweed species Vertebrata lanosa. It grows attached to other seaweed along the coast and cannot be farmed or machine-harvested - only divers can find and pick it, and only during a short window around February and March, when its aroma peaks. Faer Isles is the only distillery in the world using Ocean Truffle in an akvavit, and one of just two spirits producers globally working with the plant at all. Because the amount of seaweed is limited by how much the divers can bring up from the cold water, the akvavit is made in small, limited batches.

The lead botanical is Angelica, known locally as kvan, which grows all over the islands and has traditionally been used in Faroese food and medicine. The distillery uses both the root, which gives a mild, anise-like character, and the stem, which adds green freshness. As in all of Faer Isles' spirits, seaweed also features, adding a maritime touch to this otherwise traditional Nordic spirit.

    The akvavit has picked up international recognition, winning a silver medal at the London Spirits Competition in 2023 and a gold medal at the Speciality Masters in 2022.

    The water in this bottle waited in the dark for thousands of years while the world above changed seasons over and over. Beneath the seabed by Hestur in the Faroe Islands, deep inside the rock where the Sandoy tunnel was blasted through, the construction crew hit a pocket of crystal clear fresh water, filtered through stone and shut away from sun and salt. Faer Isles Distillery in Vestmanna heard the story and decided to distil it.

    Expert description

    North Atlantic Subsea Vodka is a Faroese Vodka from Faer Isles Distillery, distilled using water drawn 140 metres below the surface of the North Atlantic and bottled at 41.7%.

    The water was found by accident when the contractor NCC drilled the Sandoy tunnel between two of the Faroese islands. A member of the project team had the idea of passing the water on to the distillery, and tests quickly showed it was a thing apart: mineral rich, clean and with a character clearly different from ordinary Faroese rainwater. After its journey through the rock layers the water has picked up minerals that now leave their mark on the taste.

    To the finished vodka the distillery adds a small amount of distilled seaweed from the surrounding waters. That brings a nutty trace and a floral streak playing against the lightly saline base note from the water. It is a deliberate choice from a distillery unafraid to let the raw material speak.

    Faer Isles Distillery was founded by whisky enthusiasts in Vestmanna and funded through crowdfunding with backers in more than 20 countries. The release was originally reserved for members of Faer Isles' Founders' Club and is counted among the distillery's first single malt spirit releases.

    Faer Isles is working toward a lightly peated whisky with a distinct oceanic character, matured in the traditional Faroese hjallur - an open-slatted timber storehouse where salt, humidity and wind penetrate the casks. This new make spirit, however, carries no cask influence at all and therefore shows the raw, unaged character of Faer Isles' malt spirit.

    Lyng Botanical Akvavit is a Norwegian aquavit from Det Norske Brenneri, 45.9% alcohol.

    The name is drawn from Norway's heather-covered moorland, and the botanicals live up to it: caraway, real vanilla pod, rosehip, mandarin, anise, pine needle, dill, liquorice root and mint all play a part in the recipe. The result is a complex, layered aquavit that moves far beyond simple caraway snaps, unfolding instead as a tribute to Norwegian nature.

    Nyborg Aquavit Dansk Eg is an organic aquavit matured on Danish oak from Nyborg Distillery, 40% alcohol.

    The starting point is the same dill, coriander and sea buckthorn base as the distillery's other aquavits, but here the spirit is allowed to rest in casks of Danish oak. The wood draws out vanilla and a gentle sweetness, giving the aquavit a warm, round character that sets it apart from the house's clearer expressions.
