Holyrood Brewers Series NM04 Made By Edinburgh New Make is an unaged new make spirit inspired by Edinburgh's historic brewing and distilling tradition, drawn straight after distillation, bottled at 60%. Holyrood Distillery opened in 2019 as the first single malt distillery in central Edinburgh since 1925. The distillery was founded by Canadian couple Rob and Kelly Carpenter along with former Macallan master distiller David Robertson, and is housed in a renovated 'engine shed' that was once part of the Innocent Railway terminus. The distillery is known for experimenting with yeast strains sourced from the city's breweries.
