Speyside Single Malt Scotch Whisky
The Glenglassaugh Distillery was mothballed from 1986 until 2008 and this the first whisky to be made from spirit distilled at the distillery since it reopened. This is the next stage in the history of Glenglassaugh distillery. The Evolution joins the Revival bottling, and is a cask strength, Bourbon cask matured Scotch whisky that belies its youth with an astounding flavour profile. These casks have been matured fully in ex-Tennessee casks from George Dickel Distillery, and will be limited to around 6000 bottles. They’re bursting with flavour, and Stuart, Ronnie and I are already fighting over who gets to write the tasting note!
Gooseberries and lemon with an undercurrent of Scotch tablet greet the nose, there is a touch of fresh-cut grass but nothing as spirity as other young whiskies. The palate os full bodied with well-placed notes of vanilla, greengages and gentle wood spice. The finish is particularly long and chewy for a malt of this age. Quite frankly if Glenglassaugh can keep this kind of quality up, great things are on the horizon.
Appearance: Light honey gold with pale straw
Nose: Light orchard fruits of russet apple skin and fresh pear. Rich malt note followed by vanilla and oak sap. Butterscotch just manages to raise its head in the lively and youthful nose.
Palate: Rich vanilla and buttery oak with soft cinnamon spice. Banana fritter (thats another Scottish delight) with baked apple and sugared almonds on the mid palate.
Finish: Lingering malty grip with vanilla fudge and light woody spice.
