Are there any specifications you look for when choosing casks?
- The ageing and maturation of whisky is a very lengthy process. When we buy certain casks, we always have an end goal in mind.[1]goal that we want to achieve. We also pay a lot of attention to the toasting and charring of the casks (i.e. how[1]they are treated with an open flame). We know exactly why we are asking for these things and what we expect to achieve. We don't always get it right, as many factors can come into play, but by and large we do.

Are there aspects of your wood management that set you apart from others in the industry?
- As a small boutique company, we are close to the action and manage the entire process ourselves, from barrel analysis to all stages of the maturation process. Our wood policy is extremely expensive, but it allows us to refine and nurture our whisky and to put it in different types of casks. We have made a huge effort to ensure that the casks contribute correctly to the result we want. Since I took over GlenAllachie Distillery, I think we have pioneered areas like Virgin Oak where we have sourced rare casks from a wide range of origins. We will continue this experimental and boundary-pushing philosophy
