Two different kinds of wood, one grappa. Doppio Fusto is Marolo's answer to what happens when Barbaresco's Nebbiolo grapes are left to mature slowly and thoroughly, instead of being bottled fresh and clear.
Expert description
Marolo Grappa Di Barbaresco Doppio Fusto is an Italian grappa distilled from the pomace of Nebbiolo grapes from Barbaresco in Piedmont and aged in two different types of wooden cask, bottled at 42% ABV in a 50 cl bottle.
"Doppio Fusto" means double cask, and the name reflects that the grappa has rested in both oak and cherry wood barrels. The two woods each contribute their own nuances, and the result is a deeply amber grappa with a far more layered character than the fresh, unaged expression of the same grape and district.
The style grows out of Marolo's ongoing interest in cask ageing, which the distillery has pursued since 1980, when it was among the first in Italy to let grappa rest in wood instead of only steel.
