    In 2010, Stauning was still nine friends with a shared dream, working out of an old meat-processing plant in Skjern. This cask is from that era – three winters in Oloroso sherry wood, bottled in 2013 with sherry written all over it.

    Stauning Traditional Oloroso Cask 2010/2013 is a Danish Single Malt Whisky matured in Oloroso sherry casks and bottled at 52.8%. The Traditional expression is Stauning's unpeated single malt built on malted barley – the foundation the distillery was built on. Oloroso is a dry sherry style rich in walnuts, dried fruit and raisins, and three years in these casks left a decisive mark. Stauning's small copper pot stills and intensive production method build character quickly, and that shows clearly in the glass. This is among the earliest commercial releases from the distillery, from a time when total production was vanishingly small.

    Tasting notes

    Nose

    Dried apricots and raisins upfront. Vanilla, light oak and a nutty undercurrent from the sherry drum. A hint of dried orange peel.

    Palate

    Creamy and full. Christmas cake, dark raisins and sherry sweetness. Spices – star anise and black pepper – arrive mid-palate.

    Finish

    Long and warming. Sherry tannins linger alongside a gentle dark chocolate bitterness.

    How should I serve it?

    Enjoy it neat in a tulip glass to capture the full sherry character. A single drop of water can open up the dried fruit aromas. Serve at room temperature.
